So it is the beginning of the New Year. Time to reboot. To have new aspirations and turn over a new leaf.

I will give you some free advice right now. Do not go to the gym for a week. It will be absolutely packed with people with good intentions and high hopes. It will die by the end of the month, I am sure of it.

Actually, I kept my New Years resolution from last year! It was to floss everyday. Best. Resolution. Ever.

So what will it be this year? Maybe to make healthier...breakfasts?

As you can see, I am not giving up my oatmeal eating habits for the New Year.

And why should I? I just googled what the best foods to eat for breakfast, and the first result was oatmeal. The perfect New Years breakfast, don't you think?

Caramelized bananas are something of my childhood. My mom would "accidentally" burn everything, then call it "caramelized". Bananas were some of the things that she would "caramelize" often. But sometimes it was foods that are definitely not supposed to be caramelized. Like: "The toast isn't burnt, it's caramelized". 

But actually trying to caramelize something? This is definitely something that I am loving in my adulthood.

Maybe this oatmeal would taste amazing alongside some caramelized toast?

Caramelized Banana Oatmeal

Healthy Baked Caramelized Banana Oatmeal! One of my favourite breakfast recipes. Made with one ripe banana and two non-ripe ones.

Ingredients

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 large egg, slightly beaten
  • 1 medium ripe banana, mashed
  • 1 ½ cups milk
  • 1 teaspoon vanilla extract
  • 2 medium bananas, sliced into coins
  • 1 tablespoon brown sugar

Instructions

  • Preheat the oven to 375°F. Grease a square baking pan and set aside.
  • In a medium bowl, mix together the oats, baking powder and salt.
  • In a separate bowl, mix together the egg, mashed banana, milk and vanilla until fully combined.
  • Slowly mix in the wet ingredients into the dry ingredients until fully incorporated. Fold in half of the banana coins.
  • Pour the oat mixture into the prepared baking pan. Line the top of the baking pan with the remaining banana coins.
  • Bake in the preheated oven for 25 minutes. Remove from the oven and sprinkle the top with the brown sugar. Return to the oven, and broil for 3-4 minutes.

  2. Mmmmm love love love healthy breakfast! It's the only way to do breakfast in my opinion--at least 98% of the time. 😀 And I'm so glad I work out at home because I'm afraid I'd be one frustration woman if I went to 24HR right now 😛

  9. Happy New Year! I never make resolutions because it seems I’m always setting myself up for failure, and flossing every day is good. I’m a bit of a flossing maniac too.

    And on the topic of best offs, this seems the best breakfast ever. I love caramelised bananas and oatmeal so putting them together is like the best thing for me.
