Fluffy Blueberry Pancakes recipe made with fresh blueberries. So easy to make, and somewhat healthy, they make a delicious filling breakfast idea.

Can you believe it has took me all of this time to make the most classic breakfast recipe ever? The real question is, is there even a time when I walk into a breakfast restaurant and DON’T order Blueberry Pancakes?? Either on the side or as the main meal, it is definitely one of my favorite things to eat for breakfast.
I am eating these Blueberry Pancakes as a break from all of the cake I have been eating lately. Blueberry Pancakes Ingredients
You just need 10 ingredients to make this Blueberry Pancake recipe. All you need is:
- Whole milk: Can be replaced by a non dairy milk if you want dairy free pancakes.
- White vinegar: This is to sour the milk and give the pancakes an extra rise. You can replace this with lemon juice.
- All purpose flour: To up the nutrition for these pancakes, use whole wheat.
- Salt: This helps bring out the flavors more.
- Baking powder: This helps make the pancakes fluffy!
- White sugar: Kind of optional, especially if you load your pancakes with maple syrup.
- Large egg: Replace with a flax egg (and replace the milk to a dairy free version) if you wanted vegan pancakes.
- Vanilla extract: Adds to a blueberry muffin like taste. Can also replace with almond extract.
- Melted butter: A little adds a lot of flavor, and helps get that golden brown color.
- Blueberries: Using juicy blueberries is key.

Tips
Storage: Store any leftover pancakes in an airtight container in the fridge for 2-3 days. I love reheating them in the toaster, but microwaving them for around 10 seconds works as well.
Freezing: These pancakes freeze so well. Just place the cooled pancakes in a large freezer bag and freeze for up to 3 months. When ready to eat, just place the frozen pancakes in the toaster!
Replace the blueberries. Any berries work, just make sure that you are using fresh juicy berries for the best results. I love strawberries and raspberries best.
Add some toppings: Syrups are classic on pancakes, but get creative with it! Whipped cream and extra blueberries are another favorite in my house.

Blueberry Pancakes
Ingredients
- 1 cup milk
- 2 tsp white vinegar
- 1 1/4 cups all-purpose flour
- 1/2 tsp salt
- 1 Tbsp baking powder
- 1 1/4 tsp granulated sugar
- 1 large egg
- 1/2 tsp vanilla extract
- 1/2 Tbsp salted butter, melted
- 1/2 cup blueberries (fresh or frozen)
Instructions
- In a small bowl, mix together the milk and vinegar. Let sit for 5 minutes to "sour".
- In a large bowl, mix together the flour, salt, baking powder and sugar.
- When the milk has soured, beat in the egg, vanilla and butter. Add the wet ingredients to the dry ingredients, and mix until fully combined. Fold in the blueberries.
- Allow the batter to rest for 30 minutes to 1 hour.
- Heat a large skillet over medium heat and spray with cooking spray. Scoop 1/4 cup of batter for each pancake, and flip when bubbles are covering the surface of the pancake. Cook the other side until it is golden.
