Berry season is my favorite season.

But then again, so is pumpkin and apple season. The thing with that is, I can buy canned pumpkin and apples all year round. It is rare that I can get some good berries in the dead of winter. Or if I can buy it any kind of berries in the dead of winter. So I am taking advantage of the abundant amount of berries in the stores and making these Banana Blueberry Oat Muffins.

What you need to make Banana Blueberry Oat Muffins

You don't need much at all. Apart from a lot of bananas, and blueberries. All you need is:

  • bananas
  • butter
  • white sugar
  • flour
  • cinnamon
  • baking soda
  • baking powder
  • salt
  • old fashioned oats
  • blueberries
  • sparkling sugar

Tips & Tricks

  • Don't have blueberries? This recipe is so versatile that you can replace the blueberries with any fruit. Strawberries, raspberries.. whatever you have lying around. And even if you don't have fruit, you can replace them with nuts or dried fruit if you like!
  • Don't have sparkling sugar? Coarse sugar works great too. If you don't have either coarse or sparkling, it tastes just fine without it. As a personal preference, I prefer having the sugar on top. It reminds me of a bakery style muffin.
  • Do not overmix the batter!! This is a lesson that I learned in grade 8 when I took cooking in school. Overmixing the batter causes muffins to be dense and chewy instead of fluffy.
  • Storing these muffins at room temperature: You can store these Banana Blueberry Oat Muffins in an airtight container on the counter for up to 5 days.
  • Freezing these muffins: These muffins freeze beautifully. You can put them in a freezer bag, then place in the freezer for up to 4 months. When you want to eat them, simply take them out of the freezer and allow to thaw, or place one individual muffin in the microwave and heat for 15 seconds.

Ingredients

  • 5 medium ripe bananas, mashed
  • ½ cup salted butter, melted
  • ¾ cup granulated sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 2 teaspoon baking soda
  • 2 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup old fashioned oats
  • ½ cup blueberries
  • sparkling sugar

Instructions

  • Preheat the oven to 375°F. Line two muffin pans with paper liner and set aside.
  • In a large bowl, mix together the bananas, butter, sugar and eggs until fully combined.
  • Add in the flour, cinnamon, baking soda, baking powder and salt.
  • Fold in the oats and blueberries until just combined.
  • Fill the muffin cups around ⅔ of the way up. Sprinkle with the sparkling sugar.
  • Bake in the preheated oven for 18 minutes, or until a toothpick inserted in the centre comes out clean.
