I am back in Vancouver for the holidays! Time to relax! Time to enjoy the lazy days leading up to Christmas.

Of course, if I was cooking for Christmas, it would be far from lazy. I understand how for some people, Christmas cooking can be like a full time job.

So when the time comes to make a fancy monstrously huge meal, I can ensure that your breakfast stays as quick and easy as possible.

And since I never want the fall (or the flavors of fall) to end with the coming of winter, I will be making this Apple Pie Oatmeal for as long as apples are on sale. And probably even longer than that.

This recipe also ensures that, if you aren't eating apple pie for dinner, you still have the opportunity to eat it for breakfast...in oatmeal form.

Apple Pie Oatmeal

Even though this recipe isn't as quick and easy as some of my microwave oatmeal recipes, it is pretty darn easy, and this way, you can double, triple, quadruple this recipe to whatever proportions you need.

Plus all you need are 6 simple ingredients:

  • oats
  • apples
  • milk
  • cinnamon
  • nutmeg
  • brown sugar

That is it!!

Who says getting your apple pie fix needs to be hard?

Ingredients

  • 1 cup milk of choice
  • ½ medium apple, cored and chopped (skins on or off)
  • ½ cup rolled oats
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon brown sugar

Instructions

  • In a small saucepan, bring the milk to a boil. Add in the apple, oats, cinnamon, nutmeg, and sugar, and mix until fully incorporated.
  • Turn the heat down to medium low, and let the oatmeal simmer for 5-10 minutes, stiring occasionally.

  5. I find that eating apples on their own gives me what I like to call a "hamster tummy" making me more hungry than I was before I had the apple... BUT, when eating an apple with something it is just fine, and especially filling when featured in my porridge with lots of cinnamon 😀
    And you know what? I was randomly given an apple today by a friend (and no, I'm not a teacher...hah!), what are the chances? I take it as a sign, breakfast tomorrow = sorted! x
