These Apple Muffins make a great easy breakfast idea. Made with warm spices and simple ingredients, they are perfect for the fall season.

It’s almost apple season! I am buying way too many fresh apples lately. I just can’t get enough of that apple flavor at this time of year. And I think that these Easy Apple Muffins might be one of my favorite things to make during the fall.
PART of the reason I am making these muffins is because my boyfriend is forcing me to eat healthy. Not forcing me like tying me to a chair and force feeding me kale and quinoa (which I wouldn’t mind too much), but saying “we will not buy chocolate, candy, potato chips…” I kind of stopped listening after that, but I got his point.
I convinced him that I will bake one healthy thing, then one unhealthy thing. You know…to balance things out. And since these muffins have apples in them.. Well they must be healthy. Or that’s what I convinced him.
So my friends, you can be expecting my next baked good to be unhealthy. Or hey, maybe I will jump on the healthy bandwagon and only bake healthy.
Alternately, maybe I can convince him that anything I bake would be healthier than the junk you buy pre-packed in the stores. I will keep you updated. In the meantime, enjoy these cinnamon apple muffins!

Apple Muffins Ingredients
These healthy apple muffins are made with simple pantry ingredients. All you need is:
- all purpose flour
- baking powder
- baking soda
- salt
- ground cinnamon
- ground nutmeg
- softened and melted butter
- white sugar
- brown sugar
- large eggs
- vanilla extract
- shredded and chopped apples

Tips
Storage: Store these apple cinnamon muffins in an airtight container at room temperature for up to 3 days.
What is the best apples to use? I like using tart apples such as pink lady or granny smith apples. However, if you want to make more sweet muffins, you can use sweet apples such as Honeycrisp or gala apples.
Add extra apples. This recipe only uses 1 fresh apple, so if you want a more apple packed muffin, try adding more apple chunks or shredded apple to the mix.

Apple Muffins
Ingredients
Muffins
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 cup salted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 1/2 tsp vanilla extract
- 1 large apple, peeled and cored (3/4 shredded, 1/4 cut into cubes)
Instructions
- Preheat oven to 375˚F. Line muffin pan with paper liners, or lightly spray a muffin pan.
- In a medium bowl, combine the flour, baking powder, baking soda, salt, cinnamon and nutmeg.
- In a large bowl, cream together the butter, brown and white sugar until light and fluffy. Add the eggs and vanilla and beat well. Slowly add the flour mixture, mixing until fully incorporated. Fold in the apples.
- Spoon the batter into the prepared muffin pans. Sprinkle the tops with sanding sugar.
- Bake in the preheated oven for around 15 minutes, or until a toothpick inserted comes out clean. Place on wire racks to cool completely.
