Apple Muffins

These Apple Muffins make a great easy breakfast idea. Made with warm spices and simple ingredients, they are perfect for the fall season.

Ingredients

Muffins

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup salted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1 large apple, peeled and cored (3/4 shredded, 1/4 cut into cubes)

Instructions

  • Preheat oven to 375˚F. Line muffin pan with paper liners, or lightly spray a muffin pan.
  • In a medium bowl, combine the flour, baking powder, baking soda, salt, cinnamon and nutmeg.
  • In a large bowl, cream together the butter, brown and white sugar until light and fluffy. Add the eggs and vanilla and beat well. Slowly add the flour mixture, mixing until fully incorporated. Fold in the apples.
  • Spoon the batter into the prepared muffin pans. Sprinkle the tops with sanding sugar.
  • Bake in the preheated oven for around 15 minutes, or until a toothpick inserted comes out clean. Place on wire racks to cool completely.
