I feel like this S'mores Chocolate Bark is the perfect transition from summer to the holiday season.
Since I've been eating s'mores almost every week this summer, I needed to make a chocolate bark so that I can enjoy it in the Christmas months. While my usual no bake treat for the winter holidays is some vanilla ice cream topped with my Peppermint Magic Shell, I think I am going to be making this bark for a quick no bake treat or Christmas gifts for neighbors and colleagues.
Key Ingredients

- Chocolate chips: I use semi-sweet chocolate chips here, but milk or dark chocolate will also work well for the best s'mores taste.
- Coconut oil: This is to ensure the chocolate doesn't burn in the microwave. If you are using the double boiler method to melt the chocolate, you do not need this.
- Graham crackers: The base of this chocolate bark. You can also use chocolate graham crackers for a more chocolatey bark.
- Mini marshmallows: All s'mores need marshmallows! You can also cut up large marshmallows if you don't have the mini version.
How To Make S'mores Chocolate Bark

Step 1: Line a baking sheet with parchment paper. Cover with a single layer of graham crackers, breaking them into squares and/or rectangles if necessary.

Step 2: In a medium microwave safe bowl, melt the chocolate chips and coconut oil in 30 second intervals, mixing until smooth.

Step 3: Using a rubber spatula, spread the melted chocolate over the graham crackers.

Step 4: Sprinkle the mini marshmallows and graham cracker crumbs on top, then place in the fridge until the chocolate has hardened.

S'mores Chocolate Bark Expert Tips
To store this chocolate bark: place in an airtight container at room temperature for 5 days, or in the fridge for up to 2 weeks.
Use the double boiler method and omit the coconut oil to melt the chocolate. To do this, fill a medium saucepan with around 1-2 inches of water. Bring to a gentle boil then reduce the heat to a simmer. Place a metal or glass heatproof bowl on top of the saucepan and fill with the chocolate chips. Continue mixing until the chocolate is melted.
Gently press toppings in place into the melted chocolate to ensure that they stick when the chocolate has hardened.
Line the baking sheet with excess parchment paper. This creates some "handles" you can grab to easily lift the bark off the baking sheet before transferring to a cutting board to cut into pieces.

Ingredients
- 11 sheets Graham crackers
- 12 oz chocolate chips
- 1 tablespoon coconut oil
- 1 cup mini marshmallows
- graham cracker crumbs to top
Instructions
- Line a 9x13 inch baking sheet with parchment paper. Place the 11 Graham crackers in a single layer on top of the baking sheet, breaking them into squares or rectangles if necessary.
- In a medium microwave safe bowl, microwave the chocolate chips and the coconut oil in 30 second intervals, mixing until smooth.
- Using a rubber spatula, spread the melted chocolate on top of the Graham crackers.
- Sprinkle the mini marshmallows on top of the melted chocolate. Gently press them into the melted chocolate so that they are secure. Sprinkle some Graham cracker crumbs on top. Place in the fridge to harden.
- Once hardened, cut the bark into pieces.
Notes
- To store this bark, place in an airtight container and store in a cool dry place at room temperature for 5 days, or in the fridge for up to 2 weeks.
- Instead of microwaving the chocolate, use the double boiler method! Simmer around 1-2 inches of water in a medium saucepan and place a heatproof bowl on top. Add the chocolate to the bowl, and mix until melted. With this method, you do not need the coconut oil.
- Make sure to press the toppings into the melted chocolate to ensure that they don't fall off the bark once the chocolate has hardened.
- Don't have coconut oil? You can replace it with either butter or vegetable shortening.
