Chocolate Chip Cookie Pie

This Chocolate Chip Cookie Pie is the perfect dessert recipe to make when you can't decide between baking cookies or a whole pie.

I impulse bought pie crust at the grocery store the other day. It's not like I had a recipe in mind either. I just really wanted pie, and instead of buying a premade pie I went for an unbaked pie crust.

​One of the reasons that I don't bake pie much is because making the pie crust is so much effort. Mainly rolling the pie dough into a circle. I am never good at that. So I thought that if I bought a refrigerated pie crust, I would be more inclined to make pie.

And I was! I already made this Chocolate Chip Cookie Pie 3 times this month. It's like your classic chocolate chip cookie meets a perfectly flaky pie crust. My family love it, and I love that I can combine some of my favorite desserts into one.

Chocolate Chip Cookie Pie Ingredients

You just need 7 simple ingredients to make this cookie in pie form. All you need is:

  • 9 inch unbaked pie crust
  • large eggs
  • all purpose flour
  • white sugar
  • brown sugar
  • salted butter
  • chocolate chips

Tips

Storage: Store any leftover cookie pie in an airtight container at room temperature for up to 3 days, or in the fridge for up to 7 days.

Add your favorite toppings. I always top my slice of cookie pie with a big scoop of ice cream, but whipped cream or chocolate sauce are always good options too.

Swap out the chocolate chips. I love experimenting with the chocolate chips that I use in this recipe. My favorites are either dark chocolate or peanut butter chips, but white chocolate chips would be good too if you like a more sweet pie.

Ingredients

  • 1 9 inch unbaked refrigerated pie crust
  • 2 large eggs
  • ¾ cup all purpose flour
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ¾ cup salted butter softened
  • 1 cup chocolate chips

Instructions

  • Preheat the oven to 325℉. Line a 9 inch pie plate with the unbaked refrigerated pie crust, crimping the edges. Set aside.
  • Add the eggs to a medium bowl. Using a hand mixer, beat the eggs until they are light and foamy.
  • Mix in the flour, granulated sugar and brown sugar until fully combined. Mix in the softened butter until fully incorporated.
  • Stir in the chocolate chips until combined.
  • Pour the batter onto the prepared pie plate and bake in the preheated oven for 50-60 minutes, or until a knife inserted into the edges of the pie come out clean. Allow to cool in the pan for at least 30 minutes.
