I think that the best part about staying home with a new baby is having an excuse to bake at all times of the day.
This baby sleeps SO MUCH. During the day that is. We are still trying to work on that nighttime sleeping. But while my newborn and my toddler have naps, this is my prime baking time. And what better thing to bake than these Cinnamon Sugar Banana Bread Donuts?
There is something about homemade donuts that makes me so happy. For one thing, I like that I can make healthier donuts for my children and family. But for another, there is nothing better than some baked banana bread donuts alongside your morning coffee. That or my Cookies and Cream Oatmeal if I want to be extra decadent while also being healthy.

How To Make Cinnamon Sugar Banana Bread Donuts

Step 1: Preheat the oven to 350℉. Lightly spray a 6 cavity donut pan. In a medium bowl, combine the all purpose flour, baking powder and salt.

Step 2: In a large bowl, cream together the sugars, maple syrup, eggs, banana, yogurt and vanilla until smooth. Slowly add the dry ingredients, and mix until just combined..

Step 3: Pipe the batter into the prepared donut pan, and bake in the preheated oven for 15 minutes. Allow to for 5 minutes in the pan before transferring to wire racks to cool completely.

Step 4: In a small bowl, mix together the cinnamon sugar ingredients. Dip the cooled donuts into the melted butter, then dip them in the cinnamon sugar until the donuts are coated on both sides.

Storage: Store these baked banana donuts in an airtight container at room temperature for up to 1 day, or the fridge for 2 days.
Make them ahead of time. Prepare the donut batter and place in the fridge until ready to use. For best results, use within 3 days.
Use very brown, spotted bananas. The browner and spottier the bananas, the sweeter these donuts become! It also makes mashing the bananas so much easier.
Make them vegan. For the yogurt and butter, use vegan versions and in place of the eggs, use flax eggs. To make a flax egg, just mix 1 Tablespoon ground flax with 2.5 Tablespoons of water in a small bowl. Let rest for 5 minutes, then use instead of the egg.
Switch up the flour. Want to make these baked donuts gluten free? Use 1-1 gluten free flour. You can also replace it with almond flour or coconut flour, but it will not have the same moist texture as with all-purpose. If you want a more nutritious donut, replace the flour with whole wheat flour.

- 1 ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¼ cup brown sugar
- ¼ cup granulated sugar
- ¼ cup maple syrup
- 2 large eggs
- ⅓ cup oil
- 2 medium ripe bananas, mashed
- 2 tablespoon plain yogurt
- 1 teaspoon vanilla extract
Cinnamon Sugar Topping
- ½ cup granulated sugar
- ½ teaspoon ground cinnamon
- ½ cup unsalted butter, melted in a small bowl
Instructions
- Preheat the oven to 350℉. Lightly spray donut pans with cooking spray and set aside.
- In a medium bowl, mix together the flour, baking powder, baking soda and salt. Set aside.
- In a large bowl, cream together the sugars and maple syrup until combined. Mix in the eggs, oil, bananas, yogurt and vanilla until smooth.
- Slowly mix the dry ingredients into the wet ingredients until just combined.
- Scoop the batter into a large ziplock bag and cut the tip off. Fill each donut cavity around ¾ full.
- Bake in the preheated oven for around 15 minutes, or until a toothpick inserted comes out clean. Allow to cool in the pan for around 5 minutes, then transfer to wire racks to cool completely.
- Cinnamon sugar: In a small bowl, mix together the sugar and cinnamon. Dip each donut in the melted butter, then dip the donut into the cinnamon sugar, making sure to coat both sides.
Notes
- Storage: These donuts are best served warm, but if you have extras, store in an airtight container at room temperature for 1 day, or in the fridge for 2 days.
- Use very ripe bananas for this recipe. This helps naturally sweeten the donuts, as well making the donuts have a more moist texture.
- To pipe the batter into the donut pans, I like to use either a piping bag or a large freezer bag. To use the freezer bag, scoop the batter into the bag and cut a hole in the corner of the bag.
