Is it still acceptable to have pumpkin flavored foods well into the winter season? It is the winter solstice tomorrow, and I am still craving all things pumpkin. Why wasn't I craving pumpkin during the fall season?

Actually, I don't care that it is not pumpkin season. I think that I am always craving pumpkin.

These are the best pumpkin pancakes I have made in a long time. They are a family favorite for sure, and are super easy to make. I love to enjoy them along with a cup of coffee in the morning, topped with a little butter and a good helping of real maple syrup.

So whether you make this for your next special occasion (like I plan on doing), or want your favorite fall flavor in the middle of summer, these healthy pumpkin pancakes will give you a little taste of fall, no matter what time of year.

Pumpkin Pancakes Ingredients

You just need a couple of simple ingredients to make these homemade pumpkin pancakes. All you need is:

  • whole milk and vinegar (or buttermilk)
  • all purpose flour
  • white sugar
  • cornstarch
  • baking powder
  • salt
  • eggs
  • pumpkin puree (NOT pumpkin pie filling)
  • melted butter

  • small and large bowl
  • large skillet or hot griddle
  • cooking spray

Tips

Storage: Cook the remaining pancake batter and allow the leftover pancakes to cool at room temperature, then store in an airtight container in the fridge for up to 1 week.

Freezing: Place the cooled, cooked pancakes in a large freezer bag or plastic wrap and freeze for up to 3 months. Frozen pancakes are best enjoyed toasted. Just place the frozen pancake in a toaster at around medium heat and toast until warm and golden brown.

Add in some mix-ins. Mix in your favorite flavors into the pancake mix. I personally love adding white or dark chocolate chips, apples and pumpkin pie spice.

What to add on top of these fluffy pancakes. ​I love to top these pancakes with either pure maple syrup, cinnamon butter or caramel sauce.

Ingredients

  • 1 ¼ cup milk
  • 1 tablespoon white vinegar
  • 1 ½ cups all-purpose flour
  • ¼ cup powdered sugar
  • ½ cup cornstarch
  • 2 teaspoon baking powder
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup pumpkin puree
  • ½ cup salted butter, melted

Instructions

  • In a small bowl, mix together the milk and vinegar and set aside to "sour".
  • In a large bowl, mix together the flour, powdered sugar, cornstarch, baking powder and salt. Create a well in the centre.
  • Add in the eggs, pumpkin puree, butter and soured milk. Mix until smooth.
  • Heat a large skillet over medium heat and spray with cooking spray. Scoop ¼ cup of batter for each pancake and flip when bubbles are covering the surface of the pancakes. Flip and cook the other side until it is golden. Repeat for the remaining pancakes.

Notes

You can substitute buttermilk for the milk and vinegar combo.
