Last night, we stayed in Indiana. Tonight, we are staying in Kentucky. Tomorrow? Who knows! We have been booking our hotels at 7 PM on the day of, so our plans are really wide open.

Luckily, I had some posts lined up for you so that I don't leave you with nothing this week.

So here's one of my favourite things I have been making lately.

Peanut Butter Magic Shell. Need I say more?

Maybe I do if you don't know what a magic shell is. Basically, it's that hard shell coating on ice cream, sort of like the coating on those dipped cones you get at Dairy Queen.

But instead of a chocolate magic shell, I am giving you a peanut butter one.

Not that there is anything wrong with a chocolate magic shell. In fact, I made a chocolate magic shell years ago, and it has been my go-to ice cream topper for years.

But now that I made a peanut butter version? I'm going to be alternating between making the two from now on!

And you may be surprised by how few ingredients are required to make this. All you need is 2 ingredients:

  • peanut butter chips
  • coconut oil

That's it! There is no excuse NOT to make this.

Ingredients

  • 1 cup peanut butter chips
  • cup coconut oil

Instructions

  • Combine all of the ingredients in a microwave safe bowl. Microwave in 30 second intervals, mixing after each interval until smooth, around 1-2 minutes.
  • Use immediately, or store in a mason jar at room temperature, so that it is easy to heat up if it hardens.
