Today was my first day back in the classroom. Back to teaching young minds math. 

HOWEVER, my work visa hasn't come in the mail yet, so I had to zoom into the classroom. And let me tell you. I have never been the only one over zoom teaching a class, but I can say now. 0/10 would recommend. Basically everything that could go wrong went wrong.

So of course I need some of these Yogurt Covered Raisin Nutella Cups as a reward for such a difficult day.

You are 3 ingredients away from making these, and I bet you can guess at least 2 of the ingredients. All you need is:

  • Nutella
  • coconut oil
  • yogurt covered raisins

Variations

Nutella cups are so easy to customize. If you don't have yogurt covered raisins, switch it up for something you do have on hand. Try M&Ms, chocolate chips, freeze dried strawberries... the possibilities are endless!

In place of the Nutella, you can also sub in cookie butter. I almost like it even better than Nutella, but I don't usually have cookie butter on hand. You could substitute a nut butter in place of the Nutella as well, however it would make for a less sweet treat.

Ingredients

  • 1 cup Nutella
  • ¼ cup coconut oil
  • 24 yogurt covered raisins

Instructions

  • Line a mini muffin pan with 24 paper liners. Set aside.
  • In a microwave safe bowl, melt the Nutella and coconut oil in the microwave in 30 second intervals until smooth. 
  • Divide evenly into the prepared muffin pan and top with 1 yogurt covered raisin each. Transfer the pan to the freezer to harden. Remove from the freezer and transfer to an airtight container. Store in the freezer or the fridge.
