And I think gingerbread is very much an in between seasons flavour.

Because my life has been SO hectic lately, I have had almost no time to bake.

So if you know me at all, that means that I am getting extremely irritable. I need to whip up SOMETHING to destress here.

When I saw gingerbread cookie mix in my local grocery store, I knew that I needed to buy it. Just to make something in my kitchen this week! I am seriously neglecting my blog!

These Gingerbread Mix Cookie Bars were a natural fit this week.

Not only are they stupid simple to make, they make me feel like I am already on the Christmas holiday. All I need is a warm mug of hot chocolate and a book by the fireplace. 

Honestly, I can't wait until Christmas!

If you can find some ginger bread cookie mix, do yourself a favour and make these bars!

They are made with the mix plus 4 other kitchen essentials you probably already have in your pantry. 

I am counting down the days until my next holidays, so that I can bake all of the things. These cookie bars may end up on the rotation even then because they are so dang good!

Ingredients

  • 500 g gingerbread cookie mix
  • ¼ cup all-purpose flour
  • ½ cup salted butter, softened
  • 2 large eggs
  • 3 tablespoon molasses

Instructions

  • Preheat the oven to 350°F. Lightly spray a 9x13 inch baking dish with cooking spray and set aside.
  • In a large bowl, mix together all of the infredients until fully combined.
  • Pour the mixture into the prepared baking dish, and place in the preheated oven for 20-25 minutes, or until a toothpick inserted comes out clean. Allow to cool completely in the pan before cutting into squares.

  1. I made these this year and I think Betty Crocker did some shrink-flation. A box is now 411 grams. I added a little more flour and spice to bulk it up

    1. I just weighed the contents in the box that says it is 411 grams and mine only contained 353 grams so this should be fun haha

    I actually made drop cookies using this recipe but with unsweetened applesauce in place of the butter and about half a cup of chocolate chips added after everything was mixed. Baked for 10 minutes and they came out great. Thanks for the idea!

    1. Same for me. I added an extra egg and some 1/2&1/2 just to make it thin enough that it it was not crumbly. My gingerbread mix was 496g so that was not the problem. They are in the oven now.... so we will see

    1. I used betty crocker brand (it is linked below the recipe), but you can use any as long as it is the same weight as mine!!

    Yum! Cookie bars are great for the holidays because they're less time consuming that rolling out each individual cookie. Love this!
