Who doesn't love mornings?

Mayyybe I'm just looking at the sample size of one, which is myself. I am THE morning person. Even if I don't set an alarm, I wake up before 7 AM no fail. So you can see how problematic it is if I want to make breakfast for everyone on weekends, where the majority just want to sleep in until noon.

I have only just started following the quinoa craze recently, which means that so far I have only experimented with some savory quinoa dinners. So on this lonely early morning, I decide to do the complete opposite: a sweet quinoa breakfast.

I've got to tell you people, these are THE pancakes to wake up to in the morning. I mean, what's better than a fluffy protein packed pancake. I was really surprised by how fantastic these pancakes were. I truly believe that quinoa is the ultimate ingredient.

Quinoa Pancakes

Perfectly fluffy quinoa pancakes made with quinoa and whole wheat flour. Healthy and packed with protein, this makes a great filling breakfast.

Ingredients

  • 1 cup cooked quinoa
  • ½ cup all-purpose flour
  • ¼ cup whole wheat flour
  • 2 teaspoon baking powder
  • 1 large egg
  • 1 large egg white
  • 1 tablespoon salted butter, melted
  • ¼ cup milk
  • 2 Tbps maple syrup

Instructions

  • In a medium bowl, mix together the quinoa, flours, and baking powder.
  • In a separate bowl, whisk together the egg, egg white, butter, milk and maple syrup until smooth.
  • Slowly mix the wet ingredients into the dry ingredients until fully combined.
  • Heat a large skillet over medium heat and spray with cooking spray. Scoop ¼ cup of batter for each pancake, and flip when bubbles are covering the surface of the pancake. Cook the other side until it is golden.

  2. I am a morning person too. But I don't like to cook until I've been up a few hours and nobody but me cooks in the house. So big breakfasts like this are rare for me. But pancakes for dinner... now that's an idea. GREG

  3. I so wish I had your morning genes. I usually have to drag myself out of bed at the last possible minute before rushing out the door. But if pancakes were more often a part of my morning, I may be convinced to get up a little earlier. 🙂

  5. Lovely idea! Quinoa is all over the place these days, but I've definitely never tried pancakes with them (or at least not adding cooked quinoa as opposed to using quinoa flour). Sounds like a great breakfast.
