It's February already! Where did the time go?
Anytime I go to the mall, all I see nowadays are Valentine's Day trinkets and chocolate. Kind of makes me wish I was spending the day with my husband.
But, even though our long distance marriage is difficult, he is going to be visiting me for a week starting on February 16th.
Which kind of makes it better, right? Half priced chocolate and restaurants that aren't overbooked here we come!

Even though John isn't going to be here for Valentine's Day, thanks to the generous people over at Wild Coast Fruit, I have a couple of bags of their Dark Chocolate Whole Blueberries and their Dark Chocolate Whole Cranberries to snack on until I see him again.
And I am so addicted. Even if Wild Coast Fruit don't do an after Valentine's Day sale, I will still probably buy a couple of bags so that I can share them with John when he gets here. Because I am sure I will finish the bags I got sent before then!

I wanted to make a recipe with them so that I wouldn't eat the entire bag all at once. Maybe this way, there will be leftovers for when John arrives.
Unlikely, but you never know!
When I think about Valentine's Day, I think about a movie night in with loved ones. That is usually how I spend my Valentine's Day. Going out and overpaying for dinner is stressful and not my idea of a good time. I much prefer staying in to going out to be completely honest.
And movie night needs SNACKS!! A sweet and salty popcorn mix is usually my go-to movie night snack.

The star of this popcorn mix is obviously the dark chocolate covered whole berries.
You know how you pick out all of the chocolate when you eat trail mix and leave all the nuts? Well, that is basically what I do when I eat this popcorn mix.
That is why to fully enjoy this mix without being disappointed when you run out of chocolate is to eat it with a movie in the dark. That way, you have no way of knowing what you are grabbing in your handful.
Or, you could just eat the chocolate straight from the bag. Your choice.


Wild Coast Chocolate Covered Fruit Popcorn
Ingredients
- 2 tablespoon coconut oil
- 1 teaspoon salt
- ⅓ cup popcorn kernels
- 2 tablespoon salted butter
- 1 cup pretzels
- ½ cup chocolate covered blueberries
- ½ cup chocolate covered cranberries
Instructions
- In a medium saucepan, melt the coconut oil on medium heat. Sprinkle with salt. Place 1 kernel in the middle of the pot and wait until it has popped.
- Once the kernel has popped, remove the saucepan from heat and pour in the remaining kernels. Shake the saucepan for around 30 seconds and return to heat.
- Continue to shake the saucepan while on the stove as the kernels start to pop. Only remove from heat once the kernels stop popping. Be careful not to let them burn!
- In a small bowl, melt the butter. Drizzle melted butter on top of the popcorn.
- Pout into a large bowl. Mix in pretzels, chocolate covered blueberries and chocolate covered cranberries.

I have never eaten a fruit covered in chocolate other than raisins. I had a candy bar that had oranges in it one time, but that is not the same as these. It might also be the most effective way to get fruit into the diet of our kids!!!
