I loathe walking into malls around Christmas. I walk in and it’s like a circus. Everyone in the mall is juggling at least 5 bags some even while also pushing their toddler in a stroller. I’m always tempted to walk over there and toss a treat into their mouth.
But the music. THE MUSIC.
Don’t get me wrong, I love Christmas carols. At my house it doesn’t feel like Christmas until we bust out the Anne Murray Christmas CD. There’s nothing like the song “Christmas in Killarney” to get you ready for the big day. But when you’re in the mall, at the grocery store, or even on the bus, I think we can take a break from this Christmas craze.
While this makes me sound like I am a serious Scrooge,
there is nothing worse than listening to the instrumental version of “12
days of Christmas”. Just imagine it! It’s incredibly repetitive.
I needed something to calm me down. To get into the Christmas spirit without any Christmas music. And this was the perfect solution.

What you’ll need:
Cookie:
-1 cup butter
-2 cups all-purpose flour
-1/3 cup coffee cream (light cream)
-1/3 cup white sugar
Filling:
-1/2 cup butter, softened
-1 1/4 cup confectioners’ sugar
-2 tablespoons whipping cream
-1 teaspoon vanilla extract
Directions:
1. Preheat the oven to 375˚F.
2. Cut 1 cup of butter into the flour until the mixture resembles coarse crumbs. Stir in the cream until it resembles dough.
3. Roll out the dough to 1/4 inch in thickness. Use a cookie cutter to cut them into circles, then roll them in the white sugar. Place on ungreased cookie sheetsand prick the tops with a fork.
4. Bake for 8-10 minutes. Place on wire racks to cool.
5. Filling: Beat 1/2 cup butter with the confectioners’ sugar, whipping cream and vanilla until light and fluffy.
6. When the cookies are cool, make sandwiches with the cookies and filling.
I`ve heard from my friends who`s worked at the mall how much they hate Christmas music because it`s played all day. LOL
