It is a long weekend in Canada, and I am so jealous. Granted, I just have to wait for a week for our long weekend here in the US. But I am already planning out what breakfasts to make each of the days that I am off.

I usually make my fluffy matcha pancakes on long weekends (or on St Patrick's Day), but this week I am deciding to jazz it up a little bit.

These Strawberry Matcha Pancakes are the perfect weekend brunch idea for the Spring and Summer. Matcha and strawberries are a match made in heaven, and it tastes even better in pancake form.

Strawberry Matcha Pancakes Ingredients

These strawberry green tea pancakes are only made with a couple of ingredients. All you need is:

  • all purpose flour
  • white sugar
  • matcha powder
  • baking powder
  • salt
  • milk
  • large egg
  • fresh strawberries

Tips

Top with your favorite toppings. ​I have a massive sweet tooth, so I love adding something sweet to the top of the pancakes. Greek yogurt, additional strawberries and a drizzle of maple syrup is my go-to. But some chocolate sauce also makes it extra decadent.

Freeze leftover pancakes. ​If you have more batter than you need, cook the rest of the batter and place in a single layer on wire racks. Once they are cooled, place the pancakes in a freezer bag and place in the freezer. Once you are ready to eat them, place the pancakes in a toaster and toast until warm.

Variations

Make them into gluten-free pancakes. Instead of using regular flour, oat flour or gluten-free flour are great substitutions.

Add in your favorite mix-ins. I love adding in some dark or white chocolate chips to the pancake batter, but add in whatever you like!

Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 tablespoon matcha powder
  • 2 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 1 cup fresh strawberries, diced

Instructions

  • In a medium bowl, mix together the flour, sugar, matcha, baking powder and salt. Add in the milk and egg. Mix until smooth. Fold in the strawberries.
  • Heat a large skillet over medium heat and spray with cooking spray. Scoop ⅓ cup of the batter for each pancake. Flip when bubbles are covering the surface. Cook the other side until golden.
  • Top with desired toppings.
