Ever since I got pregnant, I have hated the smell and taste of coffee. Lately, I have been living off of tea and matcha lattes. And honestly, I'm not that mad about it.

But pregnancy has also made me have an extremely strong sweet tooth. And now coming off of Mother's Day weekend, I am all sugared out. I need some healthy desserts to balance out the absolute sugar indulgence we had the past few days. And I think that this Strawberry Matcha Mug Cake is the perfect dessert for the job.

​Strawberry Matcha Mug Cake Ingredients

You only need a couple of simple ingredients to make this personal matcha strawberry cake. All you need is:

  • all purpose flour
  • culinary grade matcha powder
  • baking powder
  • white sugar
  • whole milk
  • oil
  • fresh strawberries

Tips

Use high quality matcha powder. I can't stress this one enough. If you like matcha flavor, make sure you choose a good quality green tea powder. Look for a label that says culinary or ceremonial grade matcha. You may need to go to a more specialized grocery store for this, but it is worth it! A high quality powder will give you that beautiful bright green color.

Make sure your microwave-safe mug is large enough. If it is not big enough, you risk having your mug cake spill over the sides. If you don't have any mugs large enough, you can use either a small ramekin or a small bowl.

Variations

Switch out the strawberries for other fresh fruit. I love the strawberry matcha combo, but experiment with different flavours! Try some different fresh berries, or any other fruit you have on hand. 

Add in other mix-ins. Personally, I love mixing in either strawberry jam or white chocolate chips. It compliments the slightly bitter taste of matcha so nicely.

Make this cake gluten free. Instead of using regular flour, you can easily swap it out for gluten free cake flour, oat flour or almond flour. Just make sure that if you are using almond flour you add in some extra milk.

Ingredients

  • ¼ cup all-purpose flour
  • 1 teaspoon matcha powder
  • ¼ teaspoon baking powder
  • 1 tablespoon granilated sugar
  • 3 tablespoon milk
  • ½ tablespoon oil
  • 2 large strawberries, diced

Instructions

  • In a microwave safe mug, mix together all of the ingredients until smooth. Fold in the strawberries.
  • Microwave for 1 minute and check to see if it's done. If it is still liquid on top, microwave for an additional 30 seconds.

    This matcha mug cake had such great flavor and texture. All in a mug!!! I loved the addition of the strawberries too. So good!
