I am seriously wishing I had some of these muffins with me right now!!

I made these before I left for Vancouver, so there are a few of them hanging out in my freezer for when I get back.

But not as many as I would have liked. I was munching on them right until the last day, but you can be sure I will be making them again before strawberry season is over.

These muffins make the transition between summer and fall just a liiiiittle  more bearable.

Combining my favourite summer berry: strawberries, with one of my favourite fall flavour and smell: apple cinnamon of course! The fusion of flavours is to die for!

These muffins are packed with fruits, which makes them healthy, right?

In all honesty, I actually made a very similar muffin recipe with these apple streusel muffins, so I sort of knew they would be good before I even made them. All I really did is add in some strawberries and remove the streusel. Because I was lazy. Prepping being lazy for my two weeks away from the kitchen!

But if anyone tries is with streusel, I would love to hear what you think. I just thought it would be too... extra.

But sans fruit, this base muffin recipe is amazing. If you don't have strawberries on hand, use something else! Pack the muffins with whatever you like, and I am sure it will be your next favourite thing.

The one thing I will warn you about is when you make your batter, it will look a little dry and not so runny. Don't worry about it! Just scoop it into the muffin tins and be surprised with the moist muffins that comes from it.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ cup salted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 ½ teaspoon vanilla extract
  • 1 large apple, peeled, cored and cubed
  • ½ cup strawberries, diced

Instructions

  • Preheat oven to 375˚F. Line muffin pan with paper liners, or lightly spray a muffin pan.
  • In a medium bowl, combine the 2 cups flour, baking powder, baking soda, salt, 1 teaspoon cinnamon and nutmeg.
  • In a large bowl, cream together the ½ cup butter, ½ cup brown and white sugar until light and fluffy. Add the eggs and vanilla and beat well. Slowly add the flour mixture, mixing until fully incorporated. Fold in the apples and strawberries.
  • Spoon the batter into the prepared muffin pans.
  • Bake for around 15 minutes, or until a toothpick inserted comes out clean. Place on wire racks to cool completely.
