I think I need a chocolate intervention.

The other day I bought two whole bags of chocolate covered almonds, and have managed to finish them all in only 3 days. They were just sitting in my bag, and I would absentmindedly eat them while I did work. Oh lordy.

My excuse? "It's cold outside, I need some insulation to keep me warm."

My skinny jeans never stood a chance.

That is until I realized that instead of killing myself with what is practically a full bag of sugar, (hey, it has almonds in it. Healthy?) I have decided to make some soup to keep me warm on these cold winter days.

Seriously. It seems like it's been winter for years. What's up snow? Can't we get a little break around here?

This quick and easy Split Pea and Ham Soup recipe is my favourite way to use up leftover ham. Made hearty with potatoes, carrots and celery.

Total Time: 1 hour 40 minutes

Ingredients

  • 2 cups dried split peas
  • 7 cups water
  • 1 teaspoon canola oil
  • 2 cups fully cooked ham, cubed
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 cup potato, peeled and diced
  • ½ teaspoon salt
  • ½ teaspoon ground pepper

Instructions

  • In a large saucepan, bring the split peas, water and oil to a boil. 
  • Reduce the heat, cover and simmer for 1 hours, stirring occasionally. 
  • Add in the remaining ingredients, cover and simmer for another 30 minutes, or until the vegetables are tender.

  1. Such a great way to warm up! This recipe looks like just the right amount of soup too, not a ton but enough for leftovers. Cream, savory and totally soul comforting!

    Recently got into the habit of making soups, i've heard split pea soup to be delicious and it sure looks hearty and filling.

  7. The hubby loves split pea soup...and it is nicer on your figure than chocolate covered almonds, but I'd probably go for the latter, too 🙂
