Actually, is there really such thing as buying too much? Maybe I just want an excuse to go out and buy more.

Penne Alla Vodka

This recipe couldn't be easier. All you need is:

  • penne pasta
  • butter
  • garlic
  • red pepper flakes
  • diced tomatoes
  • tomato sauce
  • heavy cream
  • parmesan
  • salt & pepper
  • garlic powder

That's it!

This Penne Alla Vodka uses a lot of my pantry essentials, so this recipe is already on my regular weeknight recipe rotation.

Usually during the fall,I am craving my Vegan Pumpkin Spaghetti, but I think this recipe is creeping into the lead.

Although that may be due to the fact that it is very hard to find canned pumpkin in stores these days. It seems like people stock up on canned pumpkin as soon as September hits.

It's me. I'm people.

So while I am rationing my pumpkin for my baked treats, I will be making this pasta on repeat.

All with a glass of vodka in my hands of course. Cheers!

Easy Penne Alla Vodka recipe. With a super creamy sauce, this pasta idea makes a great last minute weeknight dinner using pantry essentials.

Ingredients

  • 16 oz penne pasta
  • 2 tablespoon salted butter
  • 1 cloves garlic
  • ½ teaspoon crushed red pepper flakes
  • 1 (14 oz) can diced tomatoes
  • 1 (15 oz) can tomato sauce
  • ¼ cup vodka
  • 1 cup heavy cream
  • ¾ cup Parmesan cheese, grated
  • salt and pepper to taste
  • ¼ teaspoon garlic powder

Instructions

  • Cook the pasta in salted water according to package directions. Drain and set aside.
  • Meanwhile, in a large skillet, melt the butter over medium heat. Add in the garlic and red pepper flakes and cook until garlic is fragrant.
  • Place the diced tomatoes and tomato sauce in a food processor and puree until smooth. Pour the sauce into the skillet.
  • Mix in the vodka and allow to simmer for around 10 minutes.
  • Add in the heavy cream and Parmesan, and mix until fully incorporated. Allow to simmer until thickened, around 5 minutes. Mix in the salt, pepper and garlic powder. Mix in the cooked pasta and enjoy!

    This looks incredible and I'm going to save the recipe for Monday or Tuesday since it looks so easy and quick that it makes a great weeknight meal. We don't have any vodka so I'm going to use a little bit of chicken stock instead. I can't wait!
