Peanut Butter & Jelly Muffins

We are moving again!

This year has been a crazy rollercoaster ride. What with having a baby, getting a new job, not getting my work visa on time and having to stay in Canada before moving to Madison... and now we bought a house!

We move in next month, so I am trying to use up all of the ingredients we have in our current short term rental. You know, to reduce the amount of boxes we need to pack. And these Peanut Butter & Jelly Muffins use ingredients I already have in my pantry.

Substitutions

These muffins are so versatile, you can it switch up so many of the ingredients.

If you don't have peanut butter on hand, any kind of nut butter would do.

As for the strawberry preserves, I love switching that up for any flavour I have on hand. The other day I tried it with apricot, and I might even like it better. Even though it doesn't sound as classic a combo.

If you wanted to make these muffins look like bakery style muffins, try sprinkling some peanuts on top. It adds a nice crunch, and the presentation looks great.
