Nutella Shortbread Brownies

There are two types of people that are going to emerge from this quarantine. Those that become super fit, and those that will stress eat their feelings.

I have been baking like crazy over the past couple of weeks, so I think you know which group I belong to.

But stress eating when these Nutella Shortbread Brownies are around is not a bad thing, let me tell you.

If you have been reading my blog for a while, you know that I go crazy for my Nutella Brownies. I make them at least once a month. 

Now I know that once a month doesn't seem like much, but when you are a food blogger and need to be testing and publishing new recipes weekly, once a month is a LOT to redo a recipe.

But I really can't help it. It is THAT good!

The only issue is, that Nutella Brownie recipe uses 1 ⅓ cup of Nutella.

My Nutella supplies are running low! I can't use that much right now!!

So these brownies will have to do.

I know a lot of you are having a hard time finding flour, so I promise that in the next couple of weeks I will make recipes using alternate flours. But for now, all I can say is that I am glad that I bought a 50 lb bag of flour back in November. I had no idea how much it would come in handy.

The best part about these brownies is that they have a nice crunchy base with a soft, fudgy top. The perfect dessert to bite into with a warm cup of coffee.

Or to stress eat over the sink. You do you.

Nutella Shortbread Brownies

Ingredients

Shortbread

  • 2 cups all-purpose flour
  • ½ cup brown sugar, packed
  • ¾ cup salted butter, cold and cut into small pieces

Brownies

  • 1 cup salted butter
  • 7 oz Dark Chocolate, chopped (I used 85%)
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup Nutella
  • ¾ cup all-purpose flour

Instructions

  • Preheat the oven to 350ºF. Combine all of the shortbread ingredients in a food processor until it resembles coarse meal.
  • Press the mixture into a 9x13 inch baking pan. Bake in the preheated oven for around 20 minutes, or until the edges are lightly browned. Set aside.
  • Meanwhile, place the butter and chocolate in a microwave safe bowl. Heat in the microwave in 30 second intervals, mixing until smooth.
  • Mix in the sugar. Add in the eggs 1 at a time, mixing well after each addition. Mix in the vanilla and Nutella until fully incorporated. Mix in the flour until fully combined.
  • Pour the brownie batter over the cooked shortbread and spread evenly. Bake for 35-40 minutes, or until a toothpick inserted in the centre comes out clean. Remove from the oven and allow to cool completely before cutting into squares.
