Definitely in need of allllll of the comfort foods these days. 

I'm not sure what's happening with my apartment, but it seems to be colder inside than it is outside. I have been wearing 3 sweaters and my fuzzy bathrobe around my place because it's so cold.

So I have been making tea round the clock. And soups for every meal.

Kale and Bean Soup

This Kale and Bean Soup is one of my favourite recipes on a cold day. And it is so easy to make too! All you need is:

  • oil
  • onion
  • garlic
  • kale
  • broth
  • potatoes
  • beans (black and kidney)
  • diced tomatoes
  • seasoning (salt, Italian seasoning and dried parsley)

That's it!

Another vegan soup I have been loving lately is my Vegan Instant Pot Lentil Soup. But today, I didn't have any spinach in the house, so I wanted to try something different.

Thus, this soup was born.

Kale and Bean Soup

Ingredients

  • 2 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 cups kale, chopped
  • 8 cups vegetable broth
  • 1 lb white potatoes, cubed
  • 1 (15 oz) can black beans, drained
  • 1 (15 oz) can kidney beans, drained
  • 1 (14.5 oz) can diced tomatoes
  • 1 tablespoon Italian seasoning
  • 1 tablespoon dried parsley
  • ¼ teaspoon salt

Instructions

  • In a large saucepan, heat the oil over medium heat. Cook the onion and garlic until fragrant.
  • Mix in the kale until melted. Stir in the broth, potatoes, black beans, kidney beans, diced tomatoes, Italian seasoning, dried parsley and salt. Cook the soup for around 25 minutes, or until potatoes are cooked.
