Happy long weekend fellow Canadians! And to all of my American friends.. you will have wait one more week for your holiday. Canadians just do things a lot earlier than you guys south of the border (thanksgiving, Canada Day vs Independence Day, etc..)

This long weekend came at the most perfect time too. I was feeling so drained these past few weeks that I needed a weekend where I could sleep in without any shame.

Even though I woke up at 9:30 on both Saturday and Sunday feeling all sorts of shame. Why is it that I can't spend a day in bed without feeling the anxiety of having wasted the entire day?

Even though I slept in a couple of hours later than I would have liked, I did accomplish a lot over the weekend.

Not in terms of my job though. I am saving that for when I get back to school on Tuesday.

Nope, this weekend I focused on making food. Lots and lots of food.

Cupcakes, croissants, chocolate cups and some healthy muffins that I teased you with on Instagram.

But what I am the most proud of is that I made a lot of savoury meals as well. This weekend, I also made stove top mac and cheese, homemade pizza and this salmon.

I am trying to create and collect a large arsenal of recipes to be ready for when I go on my honeymoon, so I can continue to share something with you. But I just couldn't wait to share this with you all.

I think I have found my new obsession. I might just need to make this salmon every week this summer. It is so good!

This Honey Dijon Salmon recipe came about when I was looking around in my pantry for something to put on this salmon. Looking at the back of my cupboards, I noticed that I had 5 bottles of unopened mustard. How is that even possible?? Do I just not check my cupboards?

I think the problem is that I push everything that I am not using daily to the back of my cupboards. So basically, I push back everything that isn't oats, nutella and peanut butter. And mustard has been going on sale a lot lately.

You know me. I can't resist a great deal.

Even if it is for something I don't need.

Now I'm glad that I have so many bottles of mustard, because they are going to be gone soon now that I plan on making this recipe on the regular this summer.

  • salmon (duh)
  • honey
  • dijon mustard
  • lemon
  • salt & pepper

Honey Dijon Salmon

Ingredients

  • 2 lb salmon fillet
  • ¼ cup honey
  • ¼ cup dijon mustard
  • 1 medium lemon, cut in half
  • salt and pepper to taste

Instructions

  • Preheat the oven to 425˚F. Line a rimmed baking sheet with aluminium foil. Place the salmon on top and set aside.
  • In a small bowl, mix together the honey and mustard. Squeeze ½ of the lemon into the bowl, and mix well.
  • Spread the mixture over the salmon. Season with desired amount of salt and pepper.
  • Bake in the preheated oven for 12-15 minutes, until the salmon is cooked through.

Notes

  1. Any leftover salmon can be stored in the fridge in an airtight container for up to 4 days.

  2. I always feel guilty when I sleep in on a day off, don’t know why I’m up so early on days I work. I should just chill and relax. This is a great mid-week meal with easy prep.

    We have our annual Gulf Shores beach trip coming up in a few weeks with family. While the guys are out deep sea fishing, I usually take the time to prepare a big meal for the family. We always bring extra fish, like salmon with us in case the fish hull is not fruitful and this year I'd like to make this recipe!
