Have you ever done a long distance relationship? Because me and John are starting off our first year of marriage on the opposite sides of Canada, and it is a lot harder than I thought it would be.

That is also considering the fact that we have done long distance for 2 years in the past. Maybe marriage really does change things.

But lucky for me, John is flying over here tomorrow to stay for a week. The only reason he is flying over in the first place is for his PhD Convocation, but he will stay for a little longer so that we can spend at least SOME time together during our first year or marriage.

Now I need to pretend that I keep the house clean and DON'T lounge around in my pajamas all day long on a regular basis. Also, I am thinking of making enough cupcakes and cookies so that he will want to stay longer.

One of the ingredients in these cupcakes that I am OBSESSING over is the honey.

I gave some of these cupcakes to my students last week, and they were very surprised by how good they were. They told me that they never had a honey cupcake before, but they also said this tasted a lot better than any honey that they have tried in the past.

Maybe good enough for another marriage proposal from my traveling husband? You laugh now, but until you try these cupcakes, you will never know what you are missing out on.

Ingredients

Cupcakes

  • ½ cup milk
  • 2 teaspoon white vinegar
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • ¼ cup honey
  • 1 teaspoon vanilla extract

Frosting

  • ½ cup unsalted butter, softened
  • ¼ cup cream cheese, softened
  • 2 cups icing sugar
  • ¼ cup honey

Instructions

  • Preheat the oven to 350°F. Line a muffin pan with paper liners and set aside.
  • In a small bowl, mix together the milk and vinegar. Set aside to "sour".
  • In a medium bowl, mix together the flour, baking powder and salt. Set aside.
  • In the bowl of a stand mixer, cream together the butter and sugar until light and fluffy. Add in the eggs one at a time, mixing after every addition. Mix in the honey, vanilla and "soured" milk.
  • Slowly add in the dry ingredients to the wet ingredients, mixing until just combined.
  • Scoop the batter evenly in the prepared muffin pans, filling until around ¾ full.
  • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted comes out clean.
  • Allow the cupcakes to cool in the pan for 5 minutes, then transfer to wire racks to cool completely. 
  • In the bowl of a stand mixer, cream together the butter and cream cheese. Mix in the icing sugar and honey.
  • Pipe the frosting on the cooled cupcakes.

          1. But it doesn’t have measurements for cream cheese. In the directions it says to cream together the butter and the cream cheese.

          2. So sorry! I don't know how I screwed up writing up this recipe so much!
            I tried it again, and yes, I did add cream cheese to this frosting. I changed it in the recipe just now. So sorry for the confusion!

  2. I had never heard of Nude Bee honey before, but we sure do love honey in this house. Those muffins look so simple and those are the sort that appeal to me.

  3. These cupcakes sound great, honey can be such a wonderful flavour. Don't worry, the best part of long distance relationships is everytime you get together it's like the honeymoon all over again. Me and the hubby were like that for years when we were both in the Navy. Now we are retired from the sea and live a weird normal life...lol.

    My father in law raises bees and this sounds like a lovely way to use their delicious honey! I have not made honey frosting before, and it looks beautiful!

    Your pictures are fantastic. Love the pour shot. I am vegan and don't do honey so am wondering how they would taste if I substituted w/ agave nectar. I'm gonna try it and come back and let you know.
