If you are eating comfort food for breakfast, lunch and dinner, then I think you came to the right place. Because if this food doesn’t SCREAM comfort food, then I don’t know what does.
Plus, I am sure you have most of the ingredients at home anyways. This is what I call: toss everything into a casserole and hope for the best.

Some days, it is really all about what you have on hand. I usually, capital L, Love food shopping.But lately, it is so cold and icy that nothing is making me want to risk my life to get some food. So I gotta work with what I’ve got.
And what have I got at home? I have ground beef, potatoes, cream of mushroom soup and cheese. If you are even a little bit of a casserole fan, I am sure your mind went to making a casserole out of those ingredients too.
If it didn’t, shame on you!
I went back for seconds, thirds AND fourths of this Ground Beef Potato Casserole. It is that good.
And it is so easy to make! If you can brown ground beef, you can make this recipe. Guaranteed.
This recipe reminds me of something my brother would make for dinner every night when he was in university. I always thought that he was crazy. Why would you want to eat the same thing every night when there were so many other food flavours and pairings that you could be trying??
Friends, I think I know the answer. Once you find a simple comfort food recipe that is reliable AND tastes good, it is hard giving it up.

What you need to make Ground Beef Potato Casserole
- ground beef
- onion
- butter
- flour
- beef broth
- milk
- cream of mushroom soup can
- yellow potato
- cheddar cheese

Ground Beef Potato Casserole
Ingredients
- 1 lb ground beef
- 1 large onion, chopped
- 1 Tbsp butter
- 3 Tbsp all-purpose flour
- 1/2 cup beef broth
- 1/2 cup milk
- 1 can cream of mushroom soup
- 1/4 cup water
- 4 medium yellow potatoes, washed and cubed
- 2 cups cheddar cheese, shredded
Instructions
- Preheat the oven to 350°F. Spray a 9x13 inch pan with cooking spray. Set aside.
- In a medium skillet, brown the ground beef and the onion. Drain and set aside.
- Meanwhile, in a medium saucepan, melt the butter over medium low heat. Stir in the flour. Slowly add in the beef broth and milk, mixing until smooth. Bring to a gentle boil, cooking until thickened.
- Remove from heat and add in the cream of mushroom soup and water.
- Layer the bottom of the prepared dish with 1/2 of the potatoes, then 1/2 the soup mixture, then 1/2 the ground beef mixture. Repeat with the remaining potatoes, soup mixture and ground beef.
- Sprinkle the cheese over the mixture. Cover with aluminium foil and cook in the preheated oven for 75-90 minute. Remove and cook uncovered for an additional 5 minutes.

Thought this sounded great, but once taste and the potatoes were still RAW !! Yes, I covered it and baked for the allotted time. I also cut the potatoes extremely small. So bummed ! Horrible biting into raw potatoes. Guess if I make again, I would roast the potatoes first

Going to try this tonight with Potatoes O’Brien and Cream of chicken soup. (I don’t eat cream of mushroom unless I dont know it’s in the dish haha!) I was going to use cream of celery but figured cream of chicken would have to taste good! 😉 Hoping it turns out good and the peppers in the O’Brien potatoes should make it taste even better! Fingers crossed!

Well.. my step-son ate a ton of it!! My husband said it was pretty good/not bad, my daughter wouldn’t eat more than a couple bits and I didn’t care for it either haha!! However, I think the potatoes had a huge part in me not liking it! They didnt cook the way regular potatoes would have. I will try it again with fresh/not frozen potatoes! I bet cheddar soup would be AMAZING in also! It smelled fantastic though. 🙂 (I’d like to add peas and carrots also! just to try! lol)

Would love to know howbthe cream of chicken went with the dish as my husband refuses to eat anything i make with cream of mushroom in it.
i personally don’t care for cream of mushroom, but depending on the recipe you can usually substitute cream of celery, cream of onion or cream of chicken instead. If the salt and preservatives bother you there are also recipes to make you own cream base soup. I usually make a recipe the first time to the recipe, then alter it to my tastes (and my families tastes) after that.
I feel like the amount of ingredients are not quite enough for a 9×13 pan…..but the potatoes didn’t cook all the way either. I had to cook an extra 15 minutes. Still not sure if it’s cooked the potatoes. And we cut them into small cubes. Also I taste tested it. Definitely needs some salt, more seasonings – like garlic and onion powder.
Did you cover it with aluminium foil? All ovens are different, but I’m surprised that it needed an additional 15 minutes.
I think the addition of garlic or onion powder sounds great! My broth was very salty, so I didn’t add any additional salt, but I think seasoning to your tastes is very important in any recipe.
I tried this recipe and we cut the potatoes in thin wheels and an hour wasn’t long enough. The potatoes weren’t soft yet. I used ground deer and put, salt, pepper, and Nature Seasoning in the meat.
I am so sorry to hear that it wasn’t yet soft. Perhaps putting it in the microwave for a bit before would help? Or maybe it is a difference in the oven types.

I cut the recipe in half for just 2 of us. I cooked it for 80 minutes and the potatoes were quite done. I only had Baby Dutch potatoes on hand, cut into cubes. I did add salt &pepper to the potato layers. Husband loved it. I felt it needed something else and next time will use half ground beef, half bulk sausage and see what happens. I’ll sautée a couple of garlic cloves with the onion too. I also thought maybe some fried onion pieces broiled on top for an additional 10 min. At the end would be good. Not a 4 ingredient dish but oh well!
I agree! Most recipes online I’ve found are super bland and boring when it comes to spice. Salt and pepper only. Luckily I know what spices to blend and cook with so I tweak everything. I just wish there was like a recipe blog for those of us who love spice! Trying new flavors and blogging about it. Maybe I should do that 🙂
