Am I the only one that is not turning on their oven these days?

John ordered an air conditioner because he can't stand the heat. Which means he is never in the kitchen!

But maybe once it finally arrives, I will turn on the oven again. Until then, anything I am cooking will be made either on the stovetop or the Instant Pot.

This reminds me of weekend mornings with my dad when I was younger. We would be the first two to wake up in the morning on weekends. So we would make a big meal while doing crosswords together.

Those were the good old days.

Now my entire family is spread out all across the world: my mom in Vancouver, my dad in Japan, my sister in Montreal, my brother in England, and me in the US.

Thank goodness we found Zoom through this pandemic!

While we can still do crosswords together over Zoom, we can't have our regular big weekend breakfast together.

I suppose we could do it virtually, but the time zones kind of kill that idea.

So I'm trying to make it a thing with my husband.

Getting up, making some coffee and cooking up these mushrooms.

He actually doesn't like mushrooms, so it is more for me. He usually settles for the bacon and eggs. While I devour these mushrooms like my life depends on it.

Ingredients

  • 4 tablespoon salted butter
  • 8 oz button mushrooms, washed and sliced
  • 2-3 cloves garlic, minced

Instructions

  • In a medium skillet, melt the butter. Add in the mushrooms and cook for around 3-4 minutes, stirring often.
  • Add in the garlic and cook for an additional 3-4 minutes, or until mushrooms are cooked to your liking.

    Love simple recipes that have very few ingredients but taste incredible - and these mushrooms are exactly that - yum!

    Buttery mushrooms are my childhood favourites. We used to add little of cream and it became a sauce you can dip your bread in. I love your garlic version, I am making these tomorrow.
