I can't believe that it's been almost one year since Evan was born. This year has been both the shortest and the longest period of time in my life.

From a move from Chicago to Canada then to Madison, buying a house, getting a new job.. it has been a blur of activity. And I wouldn't have it any other way.

But around this time last year, I was eating dates all day every day in the hopes that it would speed up going into labour. It didn't help at all. But I got a taste for dates, and was craving them today. So here is a recipe for Date Granola. Hopefully this will satisfy my cravings.

What you need to make Date Granola

This basically uses all of your pantry essentials. All you need is:

  • rolled oats
  • cinnamon
  • salt
  • coconut oil
  • honey
  • brown sugar
  • dates

That's it!

Variations

Don't like dates? You can mix in any other dried fruit you like. I love switching it up with raisins or dried cranberries.

One substitution that sounds like it would be good but isn't is switching the honey with date syrup. Date syrup burns very easily, so even if you wanted an extra boost of date flavour, just stick to the honey and add more dates. Trust me on this one, your granola won't be salvageable if you use date syrup.

If you wanted more of a crunch, add in some nuts! Cashews and pecans are my favourite, but you can use whatever you have on hand.

Ingredients

  • 2 cups rolled oats
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2 ½ teaspoon coconut oil
  • 2 tablespoon honey
  • ¼ cup brown sugar
  • 3 dates, pitted and chopped

Instructions

  • Preheat the oven to 350°F. Line a baking sheet with parchment paper and set aside.
  • In a large bowl, mix together the oats, cinnamon and salt.
  • In a small microwave safe bowl, mix together the coconut oil and honey. Microwave in 10 second intervals, mixing until smooth. Mix in the brown sugar.
  • Mix the wet ingredients into the dry ingredients until fully incorporated.
  • Pour the granola onto the prepared baking sheet and spread evenly. Bake in the preheated oven for 20 minutes, stirring halfway through.
  • Remove from the oven and allow to cool for at least 10 minutes. Stir in the dates.
