So.. I accidentally bought 1 kg of dates from Amazon last week. It was a late night, impulse buy. All in the hopes that I would make healthy snacks, like smoothie bowls and energy balls.

Instead, the first thing I make are cookies.

But Date Chocolate Chip Cookies! So that makes them healthier than regular cookies, right?

Maybe not, because I still DO include regular sugar in the mix. But the addition of dates creates this nice, caramely taste to these cookies that make them really addicting.

Or so I've heard. I only had a couple of these cookies, whereas John ate the rest within 2 days. That is a testament to how tasty these cookies are.

Or maybe, it is signs of stress eating from his part while trying to complete his thesis for next week.

But before you gather all of the ingredients to try to make these, you need to be aware that these cookies take a little longer than your average cookie recipe. Partly because you need to boil water and dates together to form a puree. This process takes around 20 minutes so that the majority of the water will evaporate.

But trust me, it is so worth it in the end. This will create such a unique cookie experience, that you may want to experiment with this method while baking everything, from cakes to brownies to blondies.

I know I'm already planning my next date infused treat.

Date Chocolate Chip Cookies Ingredients

All you need to make these cookies is:

  • dates
  • salted butter
  • brown sugar
  • egg
  • vanilla extract
  • flour
  • baking soda
  • chocolate chips

Ingredients

  • 1 cup water
  • ¼ cup pitted dates, finely chopped
  • 3 Tbps salted butter, softened
  • 1 ¼ cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ cup chocolate chips

Instructions

  • In a small saucepan, bring the water and the dates to a boil. Reduce the heat, and allow to simmer for 20 minutes. Most of the water should have evaporated.
  • Preheat the oven to 325˚F. Line 2 baking sheets with parchment paper and set aside.
  • In a medium bowl, beat together the butter, sugar and date mixture until fully combined. Mix in the egg and vanilla.
  • Add in the flour and baking soda, and mix until fully incorporated. Fold in the chocolate chips.
  • Using a cookie scoop, scoop the dough on the prepared baking sheets and bake in the preheated oven for 12-14 minutes.
  • Allow the cookies to cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely.

    I made these for a very well-seasoned bunch of cooks on the Fourth of July. They loved them. They were easy to make.

    I folded in a bit more tollhouse chocolate chips. Yum! The kids didn't seem as hyper. lol. I made them with light brown sugar. They were still so good!

  4. That is an awesome way to include some healtjhy sugars and fibre to the mix, and they look amazing! You can also make bounce-ball types of snack. I am sure you'd come up with some amazing combinations! <3 I hope you are having an amazing week so far 😀 x
