I am always on the lookout to eat cookies, chocolate and ice cream in the morning. So these Cookies and Cream Pancakes are obviously the first place to start!

What do you need to make these Cookies and Cream Pancakes?

Pantry essentials and some treats that are kind of pantry essentials to me. All you need is:

  • flour
  • baking powder
  • salt
  • sugar
  • milk
  • Greek yogurt
  • eggs
  • vanilla
  • Oreos
  • Nutella and Ice Cream (optional... sort of)

Freezing the leftovers

I made these Cookies and Cream Pancakes all for myself because my husband was out of town. But if you aren't making these pancakes for a crowd, don't cut the recipe down! 

This is my favourite hack. Cook up all of the batter. Then, allow the leftover pancakes to cool completely. I like to lay them out on cooling racks, but you can leave them on a plate if you like. Once the pancakes are cooled, place in a freezer bag and freeze. Then to serve them later, just pop them in your toaster and boom! Toaster pancakes!

Honestly, I am not sure which one I like better: fresh or toaster pancakes.

Cookies and Cream Pancakes

Easy Cookies and Cream Pancakes recipe. A breakfast that tastes like dessert, this is the ultimate decadent morning treat.

  • 2 cups all-purpose flour
  • 4 teaspoon baking powder
  • ΒΌ teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 Β½ cups milk
  • Β½ cup Greek yogurt
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 8 Oreos, (chopped)

Toppings

  • cookies & cream ice cream
  • Nutella
  1. In a medium bowl, mix together the flour, baking powder, salt and sugar. Add in the milk, yogurt, eggs and vanilla extract. Mix until smooth.

  2. Fold in the crushed Oreos.

  3. Heat a large skillet over medium heat and spray with cooking spray. Scoop β…“ cup of batter for each pancake, and flip when bubbles are covering the surface of the pancake. Cook the other side until it is golden.

  4. Top with ice cream and melted butter. Enjoy!
