So... I just ate ice cream for breakfast. On top of a steaming bowl of oatmeal. Because this is where my oatmeal obsession is taking me. To very different tastes and flavour combos.

Oatmeal a la mode if you will. Do you think this will be a thing?

If you think this is weird, I don't blame you. I would probably think that this is super crazy too if I didn't develop a strange obsession with having really hot food/beverages with my ice cream.

It started in high school with my tea obsession. If you knew me in high school, you would know that 99% of the time, I would be drinking tea. Me and my brother were obsessed. When one pot of tea was done, we would brew a new one. We even started brewing tea in our coffee maker with loose leaf tea. That way it stays warm and we could make more of it.

Yeah, it was that bad.

So whenever we had ice cream, I was always pairing it with my tea. My mom was SO afraid that eating something super cold with something super hot would make our teeth crack. Like pouring hot tea into a really cold cup.

Lucky for me, my teeth have never cracked doing this. Always love being a human guinea pig when ice cream is involved.

And lucky for you, because this combination of ice cream and tea inspired me to pair ice cream with my NEW favourite obsession. Oatmeal all the way!

This Coffee Oatmeal with Coffee Ice Cream is also a SUPER efficient morning meal, because you get your coffee intake WITH your breakfast bowl. Just like with my go-to mocha oatmeal recipe. PLUS, you get the added caffeine from the coffee ice cream. BONUS!

I love topping my oatmeal with coconut chips, because it is so much more like a dessert and makes it look oh so pretty. If not because it tastes good, do it for the 'gram! Maybe even drizzle some Nutella on top like I did here if you want to get SUPER crazy. I won't judge!

All you need to make this recipe is:

  • strong brewed coffee
  • milk
  • old fashioned oats
  • maple syrup
  • coffee ice cream
  • coconut chips

Coffee Oatmeal with Coffee Ice Cream

Ingredients

  • cup strong brewed coffee
  • cup milk of choice
  • ½ cup old fashioned oats
  • 1 tablespoon maple syrup
  • 1 scoop coffee ice cream *
  • 1 tablespoon toasted coconut chips

Instructions

  • Heat the coffee and milk in a small saucepan. Add in the oats and maple syrup. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally. 
  • Pour into a bowl, and top with coffee ice cream and coconut chips.

Notes

*I used my homemade coffee ice cream, but you can use store bought if you can find it!

    Oh now this is an interesting idea of something different to do with ice cream, I'm not particularly a coffee person but I'm definitely going to take the oatmeal and ice cream idea and run with it.
