Now I would first like to say that two years ago, I didn’t care for cupcakes. You gave me a cupcake, I would…*gasp* I don’t know if I can even write this..turn it down. Why? You might ask? (And I would ask right now. What is wrong with you, seriously)
I can’t actually answer that question. Maybe I’ve never tried one that was really spectacular before. Maybe I didn’t like sweet things (don’t worry, I’ve gotten over that phase. I have a massive addiction, although I don’t think that’s a good thing…)
Cookie dough:
-2 tablespoons milk
-1 3/4 cup all-purpose flour
-1 egg
-1 cup chocolate chips
-1/4 teaspoon baking soda
-1/4 teaspoon salt
-1/2 cup butter, softened
-2 teaspoons vanilla extract
Cupcake:
–3/4 cup butter, softened
–3/4 cup brown sugar
-2 eggs
-1/2 cup milk
-1 teaspoon vanilla extract
-1 1/3 cups all-purpose flour
-1/2 teaspoon baking powder
-1/2 teaspoon baking soda
-1/4 teaspoon salt
Frosting:
-1 1/2 cups butter, softened
-2 tablespoons brown sugar
-1 3/4 cup powdered sugar
-1/4 teaspoon salt
-1 tablespoon milk
-1 teaspoon vanilla extract
+mini cookies
Directions:
1. For the cookie dough: In a medium bowl, combine all the cookie dough ingredients together. Scoop into tablespoon balls, and place in a container. Freeze until solid, around 2 hours
2. For the cupcake: In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs, milk and vanilla and mix well.
3. In a medium bowl, combine flour, baking powder, baking soda, and salt. Slowly mix into the wet ingredients until fully incorporated.
4. Preheat the oven to 350˚F. Line muffin pans with paper liners.
5. Scoop 3 tablespoons of batter into each muffin cavity, and place the frozen cookie dough ball on top of the batter.
6. Bake for 16-18 minutes, or until a toothpick inserted (into the side of the cupcake. NOT the middle, because the cookie dough will be gooey) comes out clean. Let cool on wire racks
7. Mix together the frosting ingredients. Pipe onto cupcakes and place a mini cookie on top
