Phew! I am finally done! I am sure all of the students out there are rejoicing with me as well! I am done with school, marking and lesson planning. Well, that is.. until next year.
But until then, this means that for the next 2 months, I can stay at home in my pjs, read all day and make elaborate smoothies for breakfast. Or maybe even smoothie parfaits.
This is going to be a great summer.

One of my problems with the summer is that I buy wayyy too much produce. I see all if these beautiful strawberries and plump blueberries that I want to buy a basket full of them. But the only problem there is, it is really hard to keep these fruit fresh for that long. Even after 3 days in the fridge my strawberries look mushy and discoloured. And my blueberries don't stand a chance that long.
So here's my question to you: if you look at the picture of those strawberries above, how many days do you think they were in my fridge? One? Two?
Those strawberries were in my fridge for five days! And they still look picture perfect.

But how can this be? You might ask. Well. I was lucky enough to be sent some food storage containers from Zyliss USA to try out. And I really couldn't be happier with their products.

I already knew I loved products from Zyliss because I have bought some of their knives in the past. But I didn't even know that they also sold food storage containers! I mean, check out their vast collection. Their selection of either glass or plastic containers will make any foodie go crazy! (With love of course!)

Even though school is over, I am thinking about all the things I can do with these containers when I go back in September. They are 100% airtight, 100% hygienic and 100% leak-proof, which means that you can dump some soup into these containers and throw it in your bag after without having to worry about it. ALSO, both the glass and the plastic containers are dishwasher, microwave and freezer safe. They have basically taken out all of the worry that I usually have when I buy food storage containers, and added some sweet bonuses also.

Ingredients

Chia Seed Layer

  • 1 ½ cups almond milk
  • 2 pitted prunes
  • 1 teaspoon vanilla extract
  • cup chia seeds

Strawberry Layer

  • 1 cup frozen strawberries
  • ½ cup almond milk

Blueberry Layer

  • 1 cup frozen blueberries
  • ½ cup almond milk

Topping Suggestions

  • Granola
  • Shredded coconut
  • Fresh blueberries
  • Fresh strawberries

Instructions

  • In a blender, mix together the chia seed layer ingredients except for the chia seeds. Pour the mixture into a small bowl, and mix in the chia seeds. Continue mixing occasionally over the next 5 minutes, then refrigerate for 3 hours, or overnight.
  • In the morning (or after 3 hours), blend the strawberry layer until smooth. Pour evenly into 2 tall cups or 2 mason jar.
  • Pour the chia seed layer evenly over the strawberry layer.
  • Wash the blender out, and mix together the blueberry layer until smooth. Pour evenly over the chia seed layer.
  • Top with your desired toppings.

Notes

Total time does not include chilling time.
