Banana Chocolate Chip Muffins

Banana Chocolate Chip Muffins

​We always have a bunch of bananas in my house. This is what happens when you have a fruit obsessed toddler who requires at least 2 bananas a day to be satisfied. 

​But on weeks where our toddler somehow hates bananas (he's a fickle boy like that), I will often bake our favorite banana bread recipe. Last week I actually baked that recipe twice. 

​So I'm trying something new. Today's recipe is for easy banana muffins. Delicious banana muffins with chocolate chips might I add. No toddler can refuse these moist muffins. Heck, I have a hard time refusing these myself!

Banana Chocolate Chip Muffins Ingredients

You just need a couple of pantry essentials to make these chocolate chip banana muffins. All you need is:

  • all purpose flour
  • brown sugar
  • baking powder
  • baking soda
  • ground cinnamon
  • unsalted butter
  • overripe bananas
  • milk
  • eggs
  • vanilla extract
  • chocolate chips

Tips

Storage: ​Store these muffins in an airtight container at room temperature for up to 4 days.

Freezing instructions: ​These muffins freeze very well. Just place the cooled muffins into freezer-safe bags, and place in the freezer for up to 3 months.

Turn ripe bananas into black bananas. Either place them in the freezer overnight, or place them in the oven if you need to make the recipe that day. To do the oven method, place the bananas on a baking sheet and bake in the oven at 300℉ for 30 minutes. 

Variations

Use whole wheat flour. If you wanted a healthier version, you can do half white flour and half whole wheat flour. Or replace all the flour with white whole wheat flour.

Make them into mini banana chocolate chip muffins. ​To do this, follow the original recipe as is, then divide the batter into a mini muffin pan. I would suggest using mini chocolate chips, because mini chips give mini muffins a better consistency.

Switch up the chocolate chips. ​I love using dark chocolate chips or milk chocolate chips in this recipe, but any kind of chocolate chip that you have on hand works well in this recipe.

Make Banana Chocolate Chip Streusel Muffins. ​Combine 1 ¼ cup of flour, ½ cup brown sugar, ¼ cup sugar, and 6 tablespoon butter in a small bowl. Before baking, sprinkle the streusel on top of the muffins.

Ingredients

  • 2 ½ cups all-purpose flour
  • ¾ cup brown sugar
  • 2 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ cup salted butter, melted
  • 2 medium ripe bananas, mashed
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup chocolate chips

Instructions

  • Preheat the oven to 375℉. Lightly grease a muffin pan with cooking spray and set aside.
  • In a medium bowl, mix together the flour, brown sugar, baking powder and cinnamon. Set aside.
  • In a large bowl, mix together the butter and bananas until combined. Add in the milk, eggs and vanilla. Mix until smooth.
  • Slowly mix the dry ingredients into the wet ingredients until just combined. Do not overmix. Fold in the chocolate chips.
  • Divide the mixture evenly into the prepared muffin pan and bake in the preheated oven for 20-25 minutes, or until lightly browned.
