These delicious Banana Chocolate Chip Muffins are my new favorite way of using over-ripe bananas. A quick and easy grab and go breakfast idea.

Ingredients

cups
all-purpose flour

cup
brown sugar

teaspoon
baking powder
½
teaspoon
baking soda

teaspoon
ground cinnamon
½
cup
salted butter,
melted
2
medium
ripe bananas,
mashed
1
cup
milk
2
large
eggs
1
teaspoon
vanilla extract
¾

chocolate chips
Instructions
Preheat the oven to 375℉. Lightly grease a muffin pan with cooking spray and set aside.
In a medium bowl, mix together the flour, brown sugar, baking powder and cinnamon. Set aside.
In a large bowl, mix together the butter and bananas until combined. Add in the milk, eggs and vanilla. Mix until smooth.
Slowly mix the dry ingredients into the wet ingredients until just combined. Do not overmix. Fold in the chocolate chips.
Divide the mixture evenly into the prepared muffin pan and bake in the preheated oven for 20-25 minutes, or until lightly browned.
