Vanilla Creamer Muffins

Easy Vanilla Creamer Muffins. This muffin recipe is the perfect nut free grab-and-go breakfast idea for busy weekdays.

Does anyone else like to walk down the refrigerated aisle and look at all of the different flavors of coffee-mate creamers, or is that just me?

Consequently, that means that I buy way too many creamers. More than I could possibly use, since I don't usually add creamer to my morning cup of coffee. So what do I do?

What I always do. I bake with it!

These Vanilla Creamer Muffins are some of the best vanilla muffins that I have ever made. It is also toddler approved, so you know that it's good!

Vanilla Creamer Muffins Ingredients

You just need a couple of simple ingredients to make these easy vanilla muffins. All you need is:

  • all purpose flour
  • baking powder
  • salt
  • vegetable oil
  • vanilla extract
  • white sugar
  • egg
  • French Vanilla coffee creamer

Equipment

  • muffin tin
  • paper liners 
  • large and medium bowl

Tips

Storage: Store the cooled muffins in an airtight container at room temperature for up to 3 days. You can also store them in the fridge for up to 1 week, however they may get more dry. To prevent them from getting too dry in the fridge, try wrapping each muffin in plastic wrap before storing in the containers.

Do not over-mix! ​For any muffin recipe, make sure to mix together the wet and dry ingredients until just combined. If you mix the muffins too much, the center of the muffins will rise too much and make the muffins look like a cone.

Variations

Ramp up the delicious vanilla flavor. While this is a good classic vanilla muffins recipe, if you love vanilla like me, add some more of it! Make sure you add a generous amount of vanilla extract, or vanilla beans.  Vanilla bean paste also works well in place of the vanilla extract.

Replace the oil. Any neutral oil works in this vanilla muffin recipe. Canola oil, avocado oil and milk olive oil work excellent in this recipe. If you wanted a slight coconut taste, coconut oil is a great substitute. You can also use melted butter.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • cup oil
  • 1 teaspoon vanilla extract
  • cup granulated sugar
  • 1 large egg
  • 1 cup French vanilla creamer

Instructions

  • Preheat the oven to 375℉. Line a muffin pan with paper liners and set aside.
  • In a medium bowl, mix together the flour, baking powder and salt.
  • In a large bowl, mix together the oil, vanilla extract, sugar, egg and creamer until fully combined. Slowly mix the dry ingredients into the wet ingredients until just combined.
  • Divide the batter evenly between the muffin cups and bake in the preheated oven for 16 minutes, or until a toothpick inserted comes out clean.
