So here I am. All alone in my big apartment in Chicago because John left for a week to go to Germany.

At least it is only one week instead of one year like last year!

And being alone means I can make whatever strikes my fancy, right? All the foods that John hates, I can indulge while he is away.

But still, I end up eating oatmeal. Typical.

But this oatmeal is special. It is made with my homemade vanilla bean paste which, if you have not made yet, you NEED to give it a go!

If you have been following me for a while now, you may have noticed that I add coffee and chia seeds in almost every oatmeal recipe I make. And this Vanilla Bean Latte Oatmeal is no different.

The main reason for adding coffee to my oatmeals is because it is sort of like multi-tasking in the morning. If I can have my breakfast and coffee all in one bowl, for one it is less dishes. And for another thing, it is just one less thing to prepare in the morning. 

I usually have a couple of mason jars full of coffee in the fridge ready to go. Since I am a Starbucks gold member, whenever I go there for coffee and marking (arguably better than Netflix and chill) I will get a free refill on the way out the door, regardless of if I want it or not. 

More fodder for my oatmeal!

As for why I put chia seeds into my oatmeal, I think that it adds so much nutritional value to your morning bowl. Plus, it makes the oatmeal more pillowy soft, if that makes any sense to you.

Just remember to brush your teeth before heading out the door to work!

But honestly now that I am here alone in Chicago, I may just eat this for breakfast, lunch and dinner. It is THAT good!

Vanilla Bean Latte Oatmeal

Ingredients

  • cup strong brewed coffee
  • cup milk of choice
  • ½ cup old fashioned oats
  • 2 teaspoon maple syrup
  • 1 tablespoon chia seeds
  • ½ teaspoon vanilla bean paste
  • ¼ cup vanilla yogurt

Instructions

  • Heat the coffee and milk in a small saucepan on medium heat. Add in the oats, maple syrup and the chia seeds. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally.
  • Remove from heat, and mix in the vanilla bean paste. Pour into a bowl and top with yogurt.

  1. I love vanilla bean and latte as flavors, and I bet putting them in oatmeal really kicks an at times bland dish up a notch. Sounds like the perfect winter breakfast!

    So I gave this simple but delicious oatmeal a try, it was so good. I would have never thought of adding coffee to oatmeal, it really worked. The vanilla bean paste is really flavorful in this and the chia seeds added a nuttiness I loved!! This is going to be a regular breakfast this winter for me.

    Do you know why I like this oatmeal recipe so much? let me tell you, I am a crazy coffee fan and anything with coffee into it is heaven for me and so is this! This Vanilla bean latte oatmeal is indeed a bowl of goodness and flavours, both! 🙂
