It's really hit or miss here in Chicago. One day it is so hot that I want to put all my sweaters in storage. Then the next day, it's snowing.

Today, it's snowing. Tomorrow? Who knows.

But when I made these cookies? It was super hot and there was no way I was turning on my oven.

No bake cookies are the way to go this summer. And these No Bake Cranberry Chocolate Quinoa Cookies are going to be on the top of my list.

They are so easy to make. All you need is:

  • quinoa
  • coconut oil
  • maple syrup
  • cocoa powder
  • almond butter
  • oats
  • shredded coconut
  • dried cranberries

That's it!

Typically when I am making a no bake treat, I make my No Bake Peanut Butter and Chocolate Oat Fudge Bars. But I feel like these cookies are so much healthier. I mean, anything with quinoa is healthy, right?

Ingredients

  • ¼ cup quinoa
  • ½ cup water
  • ¼ cup coconut oil
  • ¼ cup maple syrup
  • cup cocoa powder
  • ½ cup almond butter
  • ¼ cup old fashioned oats
  • ½ cup unsweetened shredded coconut
  • ¼ cup dried cranberries

Instructions

  • In a small saucepan, combine the quinoa and water. Bring to a boil. Cover and reduce heat to low and simmer until cooked, around 10 minutes. Allow to cool.
  • In a medium saucepan, melt the coconut oil, maple syrup and cocoa powder. Add in the almond butter, mixing until smooth.
  • Remove from heat and mix in the cooked quinoa, oats and shredded coconut. Fold in the dried cranberries.
  • Line a cookie sheet with parchment paper.
  • Using a cookie scoop, scoop the mixture onto the prepared cookies sheet. Press down a little with your hands.
  • Place in the freezer for at least 30 minutes before serving.

Notes

These are best stored in an airtight container in the fridge.
