This is probably the quickest turnaround from making a recipe and posting it on my website. Usually it is in my post drafts for ages, then I need to edit the photos and upload them... it doesn't sound like a lot but it's a PROCESS!

But ever since posting a "sneak peek" of this recipe on my Instagram stories, I have been getting SO MANY messages from all of you requesting the recipe.

So here it is. Biscoff Ice Cream. Aka: my new favorite ice cream recipe.

I know I say "new favorite" VERY often around here, but this one is for real my new favorite. Since taking these photos, I have made this ice cream 2 more times.

And as a food blogger, I don't make many recipes more than once after I got it right. This one was the exception. The mixture of the creamy spread in ice cream is too good to just make one time. I mean, maybe the first time I made it was a fluke, right?

Biscoff Ice Cream Ingredients

This Biscoff Cookie Butter Ice Cream is so easy to make. All you need is:

  • Biscoff spread
  • white sugar
  • vanilla extract
  • milk
  • heavy cream

Equipment

  • ice cream maker
  • stand mixer (or large bowl with a hand mixer)

Tips

Make sure you use a freezer safe container. When choosing an airtight container, make sure you can put it in the freezer. This will prevent freezer burn and ice crystals forming.

Where to buy biscoff spread. I usually buy it from my local grocery store, but if you can't find it there try going on Amazon. I actually find it easier cheaper to buy it on Amazon a lot of the time.

Variations

Add in your favorite mix-ins. I have added in rice krispies, chocolate chips and various tree nuts and they have worked beautifully. If you wanted a more pronounced biscoff flavor, add in some biscoff cookie pieces. The crunchy lotus biscoff cookies will add a delicious crunch to this ice cream.

Make swirls of biscoff spread. Before freezing, melt some additional biscoff spread. Drizzle it on top of the ice cream and swirl around with a knife. The result will be beautiful swirls of cookie butter in the ice cream mixture.

Ingredients

  • 1 cup Biscoff spread
  • ½ cup granulated sugar
  • 2 tablespoon vanilla extract
  • 2 cups heavy cream
  • 1 cup milk

Instructions

  • In the bowl of a stand mixer, mix together the Biscoff spread and sugar until fully combined.
  • Turn the mixer to low and mix in the vanilla, cream and milk until fully combined.
  • Pour the mixture into your ice cream maker and process according to manufacturer's instructions.
  • When the ice cream is done, pour into an airtight container and freeze until ready to serve.

Notes

Total time doesn't include time in freezer.

    When I saw this I had to try it! A jar of Biscoff doesn't last long at my house. This ice cream didn't either! Only a few ingredients involved. Yum!
