Everyone seems to be on edge right now. This is my first year living in the US, and it might be the strangest and most uncertain election yet.

Teaching right now seems weird, because some students are increasingly disengaged while others are eager work harder to take their mind off of what is happening in the world.

Me? I am taking my anxious energy and channelling it in the kitchen. 

Ground Beef and Broccoli

This Ground Beef and Broccoli is perfect for a weeknight meal. All you need is:

  • ground beef
  • soy sauce
  • ginger
  • garlic
  • vinegar
  • sesame oil
  • hot sauce
  • broccoli

That's it!

Ground Beef and Broccoli

This is the kind of meal that I will always have in my back pocket. It is so easy to make, and I almost always have all of these ingredients in my pantry.

This meal kind of reminds me of my ground beef mushroom bibimbap, but this recipe is a LOT easier to make. Plus, I rarely have mushrooms in my house, and almost always have broccoli. This is what happens when I marry a mushroom hater unfortunately.

This is a great meal to make when you don't have any energy to come up with something fancy, or you don't have a lot of time on your hands.

Ground Beef and Broccoli

Easy Ground Beef and Broccoli recipe. This healthy keto bowl is the perfect quick and simple weeknight dinner idea.

Ingredients

  • 1 lb ground beef
  • ¼ cup soy sauce
  • 2 teaspoon fresh ginger, minced
  • 4 cloves garlic, minced
  • 2 teaspoon white vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon hot sauce
  • 12 oz broccoli, chopped

Instructions

  • Cook the ground beef over medium heat in a large skillet.
  • Meanwhile, in a small bowl, mix together the soy sauce, ginger, garlic, vinegar, sesame oil and hot sauce.
  • Add the broccoli and soy sauce mixture to the ground beef and reduce heat. Allow to simmer for around 5-7 minutes, or until broccoli is tender.
  • Serve over rice and enjoy!
