Is anyone going to want to have ice cream on their oatmeal first thing in the morning?

If you are asking me, the answer is always yes. But I think in this heat, it should be a requirement for everybody. Don't you think?

Remember last month when I made my Peanut Butter Magic Shell? That is what I put on top of this ice cream.

On top of oatmeal. Is it too much?

What do you need to make this Coconut Latte Ice Cream Sundae Oatmeal?

It is so easy to make, I can't stop making it this summer.

All you need is:

  • coconut milk
  • strong brewed coffee
  • oats
  • chia seeds (optional)
  • vanilla ice cream
  • toppings of your choice

That is it!!

This oatmeal kind of reminds me of my Coffee Oatmeal with Coffee Ice Cream, but my peanut butter magic shell in my fridge needs using and this is one of my favourite ways that I have been enjoying it.

It's definitely indulgent, but hey! You deserve it after this year we've had.

Ingredients

  • cup coconut milk
  • cup strong brewed coffee
  • ½ cup old fashioned oats
  • 1 tablespoon chia seeds (optional)
  • 1 scoop vanilla bean ice cream
  • toppings of choice (coconut chips, magic shell, etc)

Instructions

  • Heat the coffee and milk in a small saucepan on medium heat. Add in the oats and chia seeds, if using. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally.
  • When thickened, pour into a bowl. Top with ice cream and your desired toppings.
