This week was exhausting!! Between writing tests and marking math papers, I am ready to just sit back and binge watch Netflix with something sweet. How about you?

But being so tired from the week, I can only really handle making the cookie dough part. No baking. No waiting for cookies to cool. I want my sweet treat NOW.

One of the main reasons I make cookies is because I love to snack on the cookie dough. Do you eat the cookie dough? I will risk a little salmonella for a sweet snack on my way to baking cookies.

Since February is getting closer and closer, I am going to START to put out Valentine's Day recipes.

I tried that in December for Christmas recipes, and I think I only got out one recipe before Christmas. Then I continued posting the Christmas recipes I made but didn't write up after, because I got swamped with work and life and responsibilities.

So if I can get out one more Valentine's Day recipe before Christmas, I will be happy.

Do you celebrate Valentine's Day? John and I don't do anything really. I make some kind of dessert, and we might have a nicer than usual dinner where we are not both working at the same time. But it's not a huge thing.

What I really look forward to is the day after Valentine's Day. I am ALL about the half priced chocolate!

Maybe this year I will do a dessert buffet. These White Chocolate Coconut Flour Cookie Dough being one of the many desserts we can enjoy, just so I have an answer when people ask "so what did you do on Valentine's Day?". Because I might need another excuse to make these cute treats again!

What you need to make White Chocolate Coconut Flour Cookie Dough

Not much at all! All you need is:

  • whipping cream
  • stevia
  • coconut flour
  • butter
  • vanilla extract
  • salt
  • maple syrup
  • red food coloring
  • white chocolate chips

That's it!

Ingredients

  • ¾ cup whipping cream
  • ¼ cup stevia
  • ¾ cup coconut flour
  • ½ cup salted butter, melted
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 teaspoon maple syrup
  • red food coloring
  • cup white chocolate chips

Instructions

  • In a medium bowl, mix together the whipping cream, stevia, coconut flour, butter, vanilla, salt and maple syrup until fully combined. Add the red food colouring, a couple of drops at a time, mixing until you reach your desired colour.
  • Fold in the white chocolate chips.
  • Create 1 tablespoon (or bigger if you want!) balls of cookie dough with your hands. Store in an airtight container in the fridge or freezer.

  1. Never tried to use coconut flour before, is there a hint of coconut taste? I think this is very nice.. I like white chocolate!

    1. It is a lot heavier than flour, so you can't sub it 1:1 because it absorbs a lot of liquid. It doesn't really taste like coconut, it is sort of its own thing. I hope you try it!

    Sounds delicious and i like coconut cookies. It is nutricious and quite easy to make. Thumbs up for your new recipe!

  4. While I am not a fan of coconut I am a fan of this recipe and I am looking forward to trying it. I think this would be a great activity for my daughter and I to do together, she would get a kick out of the pink color.
