First of all, I want to thank you all for the advice on my ant situation! I bought some Raid trap poison...things, and they worked wonders! I haven't seen an ant in here for a couple of days now, and I am ecstatic!

Okay. Enough about ants. Let's talk my new obsession: oatmeal!

If you have been following me on Instagram, you may have noticed that on my Instagram stories I have been sharing my adventures in oatmeal almost every day. This is not even me exaggerating. I am pretty sure I went through a bag of oats only by making oatmeal these past few days.

And I have got to admit. This classic mocha oatmeal is one of my favourites so far.

So here's the weird thing about me. I love coffee.

Okay, no, that is not the weird thing about me.

The weird thing is that I have no way of making coffee at home! I mean, apart from instant coffee. But let's be real. That's not really coffee.

So how do I get my coffee fix? Um.. let me just say that I am a regular at Starbucks. And it doesn't help that my students' go-to gift for me is Starbucks gift cards. I promise, they do not go to waste.

As a frequent visitor, I get free coffee refills. So what I do is drink as much as I can staying in the store, then have another refill as I'm going out the door in my coffee tumbler. So I have some cold coffee in the fridge at all times.

While making iced coffee or putting the coffee in my cupcakes is usually my go-to use of my cold Starbucks coffee, I tried replacing some of the milk in my regular bowl of oatmeal with the cold coffee. Oh. My. God. It changed my life.

Now I get a chocolate and coffee hit, all in one bowl. And I like that it is not so sweet: only lightly sweetened with honey and some chocolate chips mixed in. Just the way I like my mochas!

I have made this so many times, both with vegan versions (made with almond or coconut milk) and with regular milk. Really what I have on hand, and either way it comes out delicious.

Be prepared to see a lot more oatmeal recipes up on the blog. For all of you out there who though oatmeal is boring and bland, think again!

Mocha Oatmeal

Mocha oatmeal made with coffee and milk instead of water. Lightly sweetened with honey, and can be made vegan.

Ingredients

  • cup strong brewed coffee
  • cup milk of choice
  • ½ cup old fashioned oats
  • 2 teaspoon honey
  • 1 tablespoon cocoa powder
  • 1 tablespoon chocolate chips

Instructions

  • Heat the coffee and milk in a small saucepan. Add in the oats and honey. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally. Mix in the cocoa powder.
  • Pour into a bowl and top with chocolate chips.

  3. A while back, I tried making chocolate oatmeal and I was pleasantly surprised by how good it was. So I'm totally with you on your mocha version.
