Is it summer yet?

Because after days and days of rain, there is finally a day of sun here in rainy Vancouver. And having a sunny day is the perfect excuse for me to take out my ice cream maker.

Not that I really needed an excuse.

This Blueberry Pudding Ice Cream is only made with 6 ingredients. So rich and creamy, just mix it, put it in your ice cream maker and you're done.

Now remember that time that I was gushing over the vanilla pudding ice cream that I made a while back? Well, I needed some way to make it better.

This is just my way of sort of hiding the fact that I am making yet another vanilla ice cream. Because even though I only have 15 ice cream recipes on this blog, the majority is just plain vanilla. Different variations of course, but vanilla ice cream none the less!

And if you aren't sick of sweets yet after the pounds of chocolate that you have probably eaten this past weekend (or is that just me?), I would urge you to try this ice cream. It's my dessert-hating mother approved.

Blueberry Pudding Ice Cream

This Blueberry Pudding Ice Cream is only made with 6 ingredients. So rich and creamy, just mix it, put it in your ice cream maker and you're done.

Ingredients

  • 3 cups milk
  • 1 cup granulated sugar
  • ½ can evaporated milk
  • ½ cup cool whip
  • ½ (102g) box instant vanilla pudding mix
  • ½ cup fresh blueberries

Instructions

  • In a large bowl, combine all the ingredients except the blueberries with an electric mixer until fully combined.
  • Pour the mixture into your ice cream maker, and process according to manufacturer’s instructions. About 5 minutes before the ice cream is done, add in the blueberries. 
  • When the ice cream is done, pour into an airtight container, and freeze until ready to serve.

  1. Whoaa!! I never realized you had so many vanilla ice creams! It just rained here and I made ice cream the next day! I love that you added blueberries to these!
