It seems like everyone has caught the mango fever.
Everywhere I go, there are mango smoothies, mango yogurt, mango salads, mango salsa… Looks like mango has been shacking up with pretty much everyone.
Not that I’m complaining, of course. I mean, recently I have been making mango smoothies, mango green smoothies, cherry mango coffee cakes, and lime chicken and mango wrap to name a few. I have caught the mango fever, and have mixed my famous chipotle egg salad sandwich with that delicious fruit. I mean, I should make the most of having mango around while it’s in season, right?
I’m glad I did. This sandwich was everything I could ever want in a sandwich, and more. The smokey flavor or the chipotle powder compliments the sweet taste of mango beautifully, and the bell peppers add a delicious crunch to the mix.
This is the perfect picnic basket recipe, and tastes like summer in a sandwich. Put this egg salad on your favorite bread and you’re good to go.
What you’ll need:
-1/4 onion, chopped into cubes
-1 red pepper, chopped into cubes
-2 teaspoons chipotle powder
-1/4 cup mayonnaise
-1 mango, peeled and cut into cubes
+salt and pepper to taste
1. Place the eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat.
2. Let eggs stand in the hot water for around 10 minutes.
3. Remove from hot water and place in a bowl of cold water. Peel the eggs and chop them into cubes.
4. Place the chopped eggs in a medium bowl and stir in the onions, red peppers, chipotle powder, and mayonnaise. Fold in the mangoes.
