Mango Red Pepper Chipotle Egg Salad

Easy Mango Red Pepper Chipotle Egg Salad recipe is the perfect sweet and salty combo. Perfect for a brownbag lunch for work or school.

Ingredients

  • 8 large eggs
  • 1/4 medium onion, cubed
  • 1 medium red pepper, cubed
  • 2 tsp chipotle powder
  • 1/4 cup mayonnaise
  • 1 large mango, peeled and cubed
  • salt and pepper to taste

Instructions

  • Place the eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat.
  • Let eggs stand in the hot water for around 10 minutes.
  • Remove from hot water and place in a bowl of cold water. Peel the eggs and chop them into cubes.
  • Place the chopped eggs in a medium bowl and stir in the onions, red peppers, chipotle powder, and mayonnaise. Fold in the mangoes.
