Mango Red Pepper Chipotle Egg Salad
Easy Mango Red Pepper Chipotle Egg Salad recipe is the perfect sweet and salty combo. Perfect for a brownbag lunch for work or school.
- 8 large eggs
- 1/4 medium onion, cubed
- 1 medium red pepper, cubed
- 2 tsp chipotle powder
- 1/4 cup mayonnaise
- 1 large mango, peeled and cubed
- salt and pepper to taste
Place the eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat.
Let eggs stand in the hot water for around 10 minutes.
Remove from hot water and place in a bowl of cold water. Peel the eggs and chop them into cubes.
Place the chopped eggs in a medium bowl and stir in the onions, red peppers, chipotle powder, and mayonnaise. Fold in the mangoes.
