Lime Chicken and Mango Wrap

Mangoes are my favorite fruit.

One, they taste AMAZING. Two, they are a gorgeous color, my favorite color: school bus yellow! Three, they taste AMAZING! (wait, didn't I already...?)

So the photos came out awful, but I can't get over how good this wrap was, so simple, so TASTY! So I had to share. I know, I'm such a giving person. And humble. Oh so humble.

So most people I know are SO frustrated when cutting and/or eating a mango. But this is what my mom would cut a mango for me when I was younger. Because it reminded me of a hedgehog. And those things are hella cute 😉

Now all you have to do is scoop this out with a spoon:

Voila! Along with some chopped red pepper, what a colorful lot!

Now I wanted a wrap that would scream at me. Scream: SUMMER! Eat me! And eat it I did.

And it was good.

What you'll need:

-¼ cup cooked chicken, diced
-juice of ½ a lime
-1 teaspoon white sugar
-½ teaspoon dried oregano
-¼ teaspoon salt
-½ teaspoon red wine vinegar
-½ mango, cut into cubes
-¼ cup red pepper, cut into cubes
-1 wrap

Directions:

    1.   In a small bowl, combine the lime juice, white sugar, oregano, salt, and vinegar.
    2.   In a lightly sprayed skillet, fry the chicken on medium heat. Pour the lime mixture on top
    3.  Place chicken, mango and red pepper on the wrap, and assemble. Enjoy!

  4. This is one very easy wrap! Love the lime chicken and its a wonder what mangoes can do, really! It turns a simple dish to a "wow" in matter of seconds.
