Dear God I am sore.
Let me paint a picture for you. Me, my boyfriend and his brother think it’s a great idea to go camping for a night. Great idea, right? But instead of the typical “let’s drive into the park and set up a tent”, we opted for a campground where we had to hike in. Sounds fun, right?
Well, we didn’t really know how long of a hike it was going to be. Turns out it was 7.5km uphill. With all our sleeping bags, food, water, tent, and clothes. When we finally reached the top, we all fell asleep instantly.
The next day, since we noticed that we weren’t sore (which was strange but awesome) we went on to hike up to Black Tusk, which was 5km away from where we camped, and even steeper than the hike to the campground. At least we didn’t need to bring the tent and sleeping bags.
Even though it was tough, it was definitely worth it. The view from the top was amazing.
When we went the 5km back to our campsite, we packed up and went the 7.5km back to the parking lot. This all happened yesterday.
So of course today I wake up all sore, with mosquito bites all over me (even on my legs which were covered in jeans!!) and I am looking for something comforting. Something refreshing.
This ice cream really hit the spot. Even though I could have probably used it more after that long, hot, grueling hike, I still appreciate it the day after. Now if you don’t mind, I’m going to lay down and rest my legs.

Vegan Coconut Raspberry Ice Cream
Ingredients
- 2 cans full fat coconut milk (400 ml each), chilled
- 1/3 cups powdered sugar
- 2 tsp pure vanilla extract
- 6 oz fresh raspberries
- 2 Tbsp powdered sugar
Instructions
- Combine the coconut milk, 1/3 cup powdered sugar and vanilla in a blender, and puree until smooth.
- Freeze the mixture in your ice cream maker according to manufacturer’s instructions.
- Meanwhile, blend together the raspberries and 2 tablespoons of powdered sugar in a blender until smooth. Strain out the seeds.
- Slowly pour the raspberries mixture in the already churning ice cream.
- Place the ice cream into an airtight container and freeze until ready to serve.

What's with Canadians that they really dig camping ?! lol One of my sisters who's living in your side of the world , go camping from time to time ….. Now , this ice cream certainly made me salivate ! It looks pretty in pink !
What an adventure, Cathleen! Camping and hiking is not for me. But I'll have to say I love your awesome ice-cream! Love the colour too.
Sounds like a mini backpacking trip! I went camping earlier this summer…it's always fun for a few days, but then I'm ready for a shower. And a bowl of ice cream, like this.
