School is upon us!! I had the first day of classes today, and I am already reverting back to my old ways. You know, where you don't have time to make your own lunch, so you buy lunch that is easy to eat so that you can get work done. Aka: all the unhealthy foods.

Now I'm going to be a good girl and eat this big bowl of veggies for dinner.

I am completely new to the buddha bowl game.

To be honest, I am kinda new to the veggies game. Even when I was a vegetarian, my idea of a balanced meal was cheesy fries and ice cream. Or some cheesy pasta and a milkshake.

Let's just say my teenage years are behind me, and I am beginning to eat like a normal human being. Despite all of the baking I do.

This buddha bowl is so versatile, I have been trying it out with different vegetables and different dressings all week. But this configuration was my faaaaavourite!!

Note on buddha bowls: always include the avocado. Always always always. It adds flavour and good fat, and it makes it taste so much more satisfying. Plus it just looks so pretty. Don't you think everything looks better with some avocado slices on top?

But then again, this is coming from a millennial. I feel like none of my parents acknowledge avocado toast as a thing.

If you have never experimented with buddha bowls before, TRY IT! I'm a convert, and this is coming from someone who considers a side of fries as their veggie intake for the day. I'm thinking I will be making a lot more buddha bowls for lunches during this school year.

Also, if anyone out there wants to tell me how to make it so that the avocado doesn't turn brown on my way to school, I will love you forever! 💕

Ingredients

  • 2 cups baby spinach washed
  • 2 small bell peppers diced (I used red and yellow)
  • ½ cup cauliflower, chopped
  • ½ cup broccoli, chopped
  • ½ large avocado, thinly sliced
  • 1 teaspoon hemp hearts
  • 3 tablespoon caesar salad dressing

Instructions

  • Layer all of the vegetables in a bowl. Sprinkle with hemp hearts and top with salad dressing.

  1. I made this before, everything's better with avocado h aha. I didn't know there was a name for this at that time.

  2. Yummy and so healthy! Definitely my kind of lunch. A small squeeze of lemon juice should stop your avocado browning or wrapping it separate in cling film so it's air tight will also help with the browning.

    1. Yeah, I just wasn't really feeling food that night because I was sick, but I knew I should have something. Bun with butter would be a good addition.

  3. all these vegetables sound really tasty! especially since i definitely pulled a dinner that was more along the lines of what you had when you used to be vegetarian, oops.
